How was everyone’s Easter? I enjoyed seeing all the family pictures on the socials Sunday. Too bad the weather here in Oklahoma was crap BUT that made it perfect for a snuggle on the couch and watch movies day! New dude and I watched 1917, which was really great. I loved the concept of how it was filmed in a “single shot style” it made the movie feel like it was taking you on a journey also. Then we watched or should I say tried to watch Love, Wedding, Repeat on Netflix…. and honestly I couldn’t have hated a movie more. They were trying entirely too hard to be funny and it wasn’t and in fact we didn’t even finish it, bleh.
OK, back to my Salmon dinner…. I made one of my first original recipes Sunday for new dude. Luckily he loves salmon as much as I do and to be honest this recipe is beyond easy and can be made with ingredients you most likely already have in your fridge.
This salmon is only a few ingredients, sliced onion and a sauce made with Mayo, Dijon mustard and Soy sauce. I know, I know it sounds weird but it is so good and the soy is essentially there to add the salty flavor to this dish. You can also add in the asparagus into the foil pack if you like your asparagus crispier, but I prefer mine roasted so I did that along with the foil pack instead of inside.
After you season your salmon with your favorite seasoning at home you will top it with the sliced yellow onion and then the sauce. Fold that bad boy up and throw it in the oven at 375 for 20minutes and then dinner is ready! The onions will still have a little bit of a firmness to them which adds some texture to the soft and flaky salmon. I served mine with roasted potatoes and asparagus both which I seasoned with the same seasoning I used on the salmon to create a cohesive flavor pallet. This was our Easter dinner which was perfect for Spring even though it was Winter outside here in Oklahoma.
I love that I have been making this recipe since I was about 23, I remember having my family over to my apartment and making this for them. Its been so many years since I have made this last but I was definitely reminded of why I loved this meal. AND it got 2 enthusiastic thumbs up from new dude!
