Ok, so lunch is literally my least favorite meal. Why you ask? Because most times I feel too lazy to make something healthy, I don’t want to make a mess in the kitchen midday and drive thrus don’t offer healthy Vegan/Vegetarian options. I know I know Wah wah wah BUT lucky you I have literally came up with the easiest lunch recipe (or dinner) that can be made on Sunday and kept for the whole week. This recipe can also be eaten in a wrap, on a baguette or over greens it is that versatile. Also, no need to use the exact ingredients I did, use what you have…. this is completely mix and match.
You know what else is great about this? NO need to get out an extra bowl to make this in, literally just use the Tupperware you are going to store it in. It also comes handy when it’s time to mix everything together because just pop on the lid and SHAKE! I also love how colorful this meal, it is super eye pleasing and would elevate your next picnic for sure! Plus the recipe for this is literally chop everything and throw into bowl!
BONUS!!!! For some added texture smash about 1/2 of the chickpeas first in the bowl before adding the other ingredients
The vinaigrette is super simple, I did provide measurements on the recipe card but it’s completely fine to just eyeball it and make it to suit your taste! The paprika will give it an overall pink color but don’t skip it… Smoked paprika especially is my FAVORITE seasoning! You will thank me!
I like to eat mine with some toast points or crackers on the side! And you can eat immediately but then refrigerate the rest and each day the flavors will melt together more and enhance! I feel like this lunch just tastes like Summer! I hope you enjoy this as much as I have been!
