Harvest

We had our first big snow this Monday and so this last weekend I did my last HUGE harvest! My garden has been very good to me this year, it takes time to get a hang of everything. I wasn’t sure what to do with all my tomatoes and then I realized….. my own tomato sauce! And even if you don’t have a garden you can easily make this with tomatoes from the grocery store!

 You will also need fresh herbs, these are all from my garden! I used oregano, rosemary and thyme. Later after I roasted the tomatoes I used basil!

You can use any amount of tomatoes but I used about 1 pound quartered. Then chop up your fresh herbs to add to the bowl, EVOO, salt and pepper and mix!

Throw it all on a sheet pan and into a 300′ oven for 2 1/2 hours!

They will look like this when they come out, you could ALSO put this pan back under the broiler to get a little bit of charr on top to add more depth to your sauce!

This is the super easy part throw your tomatoes into a blender with a handful of fresh basil, more salt and pepper, 1 tablespoon EVOO and then 2 tablespoons of red wine vinegar.

BLEND until it’s the consistency you desire and be sure to taste, you might need to add more salt and pepper!

This made 1 jar exactly and this will keep in your fridge for 2 weeks or in the freezer for 2 months!!!

You can turn this into spaghetti, pizza sauce, chicken parmesan, lasagna…… the possibilities are endless! I hope you all enjoy this!!! be proud of yourself… you made homemade tomato sauce!
