Quick Pickled Cucumbers

 I am not one with a green thumb and I have never said I am one who likes working in the yard BUT…..this year so far my “Deck Garden” is off to a wonderful start!!! In the green planter I have parsley, basil, cilantro and below I also have basil and greek basil! My Mom sent me the seeds for my Birthday which is neat….a little piece of her is always here.

 I am going to share with you a simple recipe that my Oma made, then my Mom and now a favorite of mine. It is hardly a “recipe” at all but these Quick “Pickle” Cucumbers are a family favorite.
I saved a jar that had roasted red peppers in and it is perfect for these……….you can use Tupperware or whatever you have on hand.

1 seedless cucumber (diced)
White vinegar
1/2 onion chopped small
Fresh dill (minced)
1 teaspoon sugar

 Now the recipes is more in portions……because you could use many different jars that would use different amounts of the liquids.
1/4 Vinegar -to- 3/4 Water
Dash of Salt
As much onion as you like (it turns out great to eat to)
And as much dill as you like

Close the lid and shake! That is all …. keep in your fridge and as you eat these with a meal just add more cucumber to the liquid! Every week or so you will need to add more vinegar or start fresh…but I love having these in my fridge all summer long! You really can’t make this wrong and after you make it the first time you can then adjust the ingredients to suit your taste buds!

    My husband and kids LOVE these. His grandmother called them "icebox pickles" but it's the same recipe. Tupperware used to (not sure if they still do) have a container perfect for them.And your deck garden is awesome. We had a garden for several years and I just couldn't go out and weed such a large space in the OK heat.
