Hey Friends!! Friday again and another WW week in the books or on the scale I should say!! This week I lost 0 BUT I maintained my 10 pound total weight loss and that is fine by me! I have found a system that my body seems to like……..loose weight one week and then the following week maintain it. So next week I will hopefully loose 1-2 pounds after this past week of being able to stay at my current weight. I think we all have to figure out what works best for us.
NOW….I have some awesome recipes to share with you!! I have to remind myself that this is truly a lifestyle change and NOT a diet…so all these recipes constantly amaze me. I would make any of these wether they were WW or not! First up…..
Turkey Bolognese – Matt and I loved this and it was just as great the next night as leftovers!! This is from the WW One Pot cookbook
Serves 6 – 8 points
Ingredients:
1 tbl EVOO
1 small onion chopped
1 carrot chopped
1 celery stock with leaves chopped
1 garlic clove minced
6 oz ground turkey
S&P
Pinch of nutmeg
1/4 cup red wine
1 (14oz) can diced tomatoes
1/2 cup canned tomato sauce
4 tbl reduced fat milk
4 tbl parmesan
12 oz Linguine
How to: (condensed version)
– Sautee onion, carrot and celery in oil until soft. Add garlic for 1 minute
– Add turkey and brown with veggies
– Season
– Add wine and cook until evaporated
– Add tomatoes and tomato sauce, simmer for about 30 minutes
– Add milk and parmesan
– ENJOY!!!!
I have found my favorite WW dessert and it isn’t just good……it is amazing and NO ONE would ever know it was WW unless you told them! I know this recipe has been passed around a ton, I am little late to the bowl (ha) so without further delay…….
Funfetti Cupcakes
Makes 20-24, 2 points each
Ingredients
1 box funfetti cake mix
12 oz Sprite zero
Icing:
1 tub fat free cool whip
1 package fat free vanilla pudding mix
How to:
– Preheat oven to 350′
– Mix sprite, cake mix and psrinkles together……pour into cupcake pan
– Bake for 20 minutes
– Icing:
Combine cool whip and pudding mix
ENJOY!

Ingredients:
For the chicken:
- 24 oz boneless skinless chicken breast
- 1 celery stalk
- 1/2 onion, diced
- 1 clove garlic
- 16 oz fat free low sodium chicken broth
- 1/2 cup hot cayenne pepper sauce (I used Frank’s)
For the wraps:
- 6 large lettuce leaves, Bibb or Iceberg
- 1 1/2 cups shredded carrots
- 2 large celery stalks, cut into 2 inch matchsticks
Directions:
In a crock pot, combine chicken, onions, celery stalk, garlic and broth (enough to cover your chicken, use water if the can of broth isn’t enough). Cover and cook on high 4 hours.
Remove the chicken from pot, reserve 1/2 cup broth and discard the rest. Shred the chicken with two forks, return to the slow cooker with the 1/2 cup broth and the hot sauce and set to on high for an additional 30 minutes. Makes 3 cups chicken.
To prepare lettuce cups, place 1/2 cup buffalo chicken in each leaf, top with 1/4 cup shredded carrots, celery and dressing of your choice. Wrap up and start eating

I'm making the WW cake this weekend, orange cake mix with coolwhip/chocolate frosting. I've been craving it all week.I made this the other night and was blown away by how good it was. I served it over rice and even my two year old ate it.http://www.emilybites.com/2013/01/slow-cooker-beef-broccoli.htmlThe only thing I would change is use less brown sugar, maybe 1/4 cup instead of 1/3. It was a little too much on the sweet side.
I will have to try the lettuce wraps. They look good. And I agree… no one person is alike, find what works for you.
