Picky Palate

 I have probably said this numerous times but Picky Palate is my favorite food blog! (you can visit it HERE)!! So when the cookbook came out I was SO excited and it did not disappoint! Her cooking is real, easy and delish! One of the first things I made was the homemade Apple Pie!!
Crust: I used philsbury crust from the grocery store, I mean why not?
Filling:
3 pounds Apples, thinly sliced like below
2 tablespoons lemon juice
1/2 cup sugar
1/4 flour
1/2 teaspoon salt
TIP!!! I added 1 teaspoon Cinnamon & 1 tablespoon brown sugar!

 How To:
*Place cut apples into a bowl and drizzle with the lemon juice
*Then mix the remaining ingrediants then add to the bowl to combine
*Place crust in bottom of greased pie pan, add apple mixture
*Add top crust, pinching sides to seal
*Make 4 slits in crust to breathe
*Brush top of crust with egg wash

 Bake at 350 for 65-80 minures. Mine cooked for 65 minutes! Look at this mess………no one said cooking wasn’t messy, but usually the messier the kitchen the better the meal!

 And here is my finished product, this was SOO good! I kept telling Matt that I couldn’t believe I made the pie because it was so good! And easy!!!! Don’t forget to serve warm with ice cream!

 Next up is this baby……… BBQ Chicken Mac and Cheese!!! Yup, true story that it was divine!

What you need:
1 lb mini farfalle pasta (use any pasta of choice)
5 Tablespoons butter
5 Tablespoons flour
1/2 teaspoon salt
1/2 teaspoon fresh cracked black pepper
4 Cups milk, I used 2%
5 Cups shredded Tillamook smoked cheddar cheese (you could use any cheddar cheese)

2 Cups shredded BBQ Chicken ( I shredded a rotisserie chicken and combined it with BBQ sauce)
1 Cup shredded smoked cheddar cheese

How To:
1. Preheat oven to 350 degrees F. Cook pasta according to package directions; drain and set aside.

2. Melt butter into a large dutch oven or pot over medium heat. Whisk in flour, salt and pepper; cook for 1 minute stirring. Slowly whisk in milk until smooth. Increase heat to medium high, stir continuously until liquid thickens and comes to a low boil. Reduce heat to low and stir in cheddar cheese until smooth then add cooked pasta. Pour mixture into a large baking dish then top evenly with BBQ chicken. Sprinkle with additional cheddar cheese and bake for 25-30 minutes or until hot and bubbly.

3. Let cool for 5-10 minutes and serve.

 I now have a bonus recipe for you all that I got off of Pinterest!!! Pumpkin Puppy Chow! Amazing!
Easy Peasy…..
Get a bag of Hersey Pumpkin Kisses (Target has them) unwrap them all and melt in microwave
Then combine that with 6-9 cups of corn Chex
Then add to a plastic bag with Powdered sugar and shake!
WHAM! Soooo good………..

TGIF!!!!!!! We are going to see James Bond tonight, I am super excited!

    Ummmmm BBQ Chicken mac and cheese!?!??! OH MY GOSH!! Haha! I used to get on the picky palate blog all the time but had kinda' forgotten about it- thanks for the reminder!! 🙂 I might need to get that cookbook for Christmas too!!
