I have a few things I wanted to share with you all on this Tasty Tuesday afternoon and the first being…..balls! Something about ground chicken weirds me out, so even when I was making this I was telling myself it wouldn’t be very good. But after my first bite a second helping was in my future for sure!!! Now trust me on the ingredients….I pinned this recipe but then changed it up a smidgen to make it easier!
Cheesy Chicken Meatballs
1 lb ground chicken
1 cup Panko (plus a little more)
¼ cup milk
1 small onion, minced or grated
1 Tablespoon sour cream
Salt, Pepper and a dash of garlic powder
¼ cup mayonnaise
¾ cup mozzarella cheese
¼ cup parmesan cheese
– Mix everything but the mayo and cheese into a bowl. It will be a wet mixture so add a little more panko until that it can form a ball. (not too much now) Then I used a little cookie scoop to make the balls and don’t “over” roll them. Just make a ball no need to be perfect!
– Drizzle mayo on the top of each ball as well as a mixture of Italian cheeses! I promise it works
– Bake at 400 for 15-20 minutes and they will look like this. Trust me the chicken will be done, don’t cook it longer they will dry out………….
And wham…..serve with mash potatoes!! This was so flavorful and good! Try it soon!
The weather here in Columbus has been pretty, living in Oklahoma you don’t get too much of a Fall so finally Ohio has a leg up on Oklahoma! When it isn’t raining we eat on the patio………..The highs this week are 65-72 and the lows in the 50s! This is perfect for me and would you believe we had to turn the heater on on Sunday night because the low was 34!
On Sundays we wear our Broncos gear and Matt will cheer on the team and……well, I will support the team in other ways that don’t involve watching a 4 hour game on TV! ha
So apparently Ohio is huge for Hot Air Balloons and so far every weekend lately when we wake up we wake up to this………………… SO cool huh??
And of course I had to share my latest pictures of my babies! This is Abner snuggling on me and I am sure we were watching something on Bravo!
And look at this face……….Oscar is so sweet I could eat him up! Sometimes I blow bubbles on his belly like you would with a baby…you should see his face, he has no idea what is going on its hysterical!
And lastly the past 2 night I have cooked dinner with the window up in the kitchen! It is so nice…..that is my “prep side” and I never knew how much I wanted a window in the kitchen!
Happy Tuesday…….Parenthood comes on tonight! Man, I want to be a Braverman….who’s with me???
