Picky-Palate is one of my favorite recipe blogs, her recipes are tasty, easy and approchable!!! On Sunday night I made 2 of her recipes and I had to share them with you because I KNOW you will want to make these for your family too!
Crockpot Green Chili and Rice………
3-4 large boneless skinless chicken breasts, thawed
2 cans 98% fat free Cream of Chicken soup
4 0z can chopped green chilies (I used 2 cans for more flavor, highly recommend that)
1 teaspoon cumin
1/2 teaspoon Kosher salt
1/4 teaspoon fresh cracked black pepper
1/4 teaspoon Lawry’s garlic salt with parsley
6 Cups steamed rice of choice
Blue Corn Tortilla Chips, crumbled for garnish
Layer 1 can of the soup, then the chicken (I cut mine in 1/2) then season your chicken……
Top with the other can of cream of chicken soup and the cans of green chili’s! Then close the lid and let this cook on low for 6 hours! (Mine was done in 5 1/2 hours)
Then your chicken is so tender use two forks to shred all the chicken…………… yumm!
Then all you do is get your steamed rice, top with the chicken green chili sauce and then crumble up blue corn tortilla chips! I promise you will love this, it is even better the next day for lunch!!!
I then made the Picky-Palate Pumpkin Chocolate chip cake with Pumpkin Buttercream icing! Yumm…..she makes it in 2 loaf pans but I made it in a cake pan and adjusted the cooking time!
The icing was delish of course, but I might add more pumpkin to the icing next time I make it!
