Summer Supper….

I am Baaack (2 posts in 1 day)……….I had a really good dinner last night and I have to share! I had this salad alone as my meal but it was so pretty and yummy this would be a wonderful first course to any meal! I am going to use this salad next time I have my family over…..I am sure they will be impressed!
First up you gotta make your bread…..
Slice up any crunchy french bread, brush with EVOO then bake at 400′ for 6-8 minutes. (Or until Golden and crispy) As soon as it comes out of the oven slice open a garlic clove and rub all over bread! Perfection I tell you! This is also how I make my bread for bruschetta! FYI!

Next up……..On to my version of a Barefoot Contessa Salad!
Here is all you need:
Evoo
Balsamic
S&P
Granny smith apple
Brie
Honey
Mixed Greens
Cherry Tomatoes and Green Onion

Slice your Brie. 1/4 of the circle for each person and yes, slice each wedge individually. Then drizzle with Honey, don’t be shy! Bake for around 6 minutes on 350’……Watch it carefully, you just want it to get real soft NOT melt all over the place!

Ok, lets build our salad plate! And yes, this one is best “compartmentalized”…..
Slice your cherry tomatoes in 1/2 and season with S&P add to plate!
Slice your Apple (each plate should get 1/2 an apple)
Then mix your greens with the chopped green onion, S&P, Evoo and drizzle with Balsamic Vinegar! (Not too much)

Then place your hot honey cheese (what a great word…..hot honey cheese) on your salad and you are DONE! The creamy cheese with the hint of honey goes PERFECT with the tart balsamic salad! I know this seems weird but it is TOO die for and so pretty! You should try it today!

Now a grown up twist on a childhood dessert…………
Lime Slushy = Basil/Lime Granita!
Lets Make it!
In a blender put in 2 cups of water, 3/4 cup lime juice and 1 cup sugar!

Then add in 1 cup packed basil!! Can you believe all this came from my very own basil plant? I am beaming with pride!!!

Blend Blend Blend………..

Then pour into a pie dish (or any dish really) and you will want to freeze for a few hours…………

When the dish has hardened get out a fork and start scraping and that is how your Slushy/Granita is made!

This was SO refreshing and just completely delish! So you know you can follow the exact same directions but instead of the basil blend 1 cup chopped watermelon!!! This is a great dessert for the young and young at heart!
