So yesterday I made a delish Meatless Monday Meal………Veggie Polenta Stack!
Black Beans & Navy Beans (drained and rinsed)
1 Garlic clove chopped
1 Plum tomato, chopped
Polenta in the tube, sliced into rounds
Roasted red peppers
Zucchini & Squash, sliced into rounds
EVOO, S & P
*In a bowl mix together the beans, cheese (as much as you like) basil, tomatoes and 1 tablespoon of EVOO. Salt and pepper to taste.
* Next in a foil pack spoon out bean mixture then 1 ingredient at a time stack on top. I did Polenta, squash, zucchini and ended with the red peppers.
* Seal your foil pack and bake at 400′ for 15minutes!
Let your foil pack sit for a few minutes before opening and serving! Looks yummy…….
Here is the finished product………all the flavors blend so well together, I loved it! I hope you will try this and enjoy it as much as I did! And extra bonus that it is healthy and meatless……saving the animals 1 day at a time! LOL!
I also made an Almond Pound cake from a recipe I saw in Family Circle magazine that I got in the mail yesterday. It was good because I love almond extract but not the best thing I have ever made!
