Hi Friends, lets jump right in on this Monday first full day of Spring!!! SO we all know I struggle with how I feel I should be a vegetarian but how can I give up meatballs forever? So I was thinking about it this weekend and I unintentionally have become a bit of a “flexitarian”…..meaning when Matt is not at home on weeknights I tend to make meatless dishes. And I am going to try to post more of these dishes so that maybe you and your family can incorporate these into your life. ….Maybe by starting your own Meatless Mondays!
So what you will need it to chop up some of your favorite veggies and satuee them in EVOO until softened. I used a zucchini, yellow pepper, red pepper and onion!
Then in a separate bowl combine some frozen corn, 1 can diced tomatoes (drained) and 1 can pinto beans also drained but rinsed too.
When your veggies are almost done cooking add some salt, pepper, cumin and oregano…..
Next up add the veggies in the bowl, stir and cook until heated thru….( so colorful)
And lastly scoop out some veggies, add mozzarella and sour cream and wham you are done! I promise you will not miss the meat at all, this was so yummy! I even took the left overs for lunch the following day and they were just as good!
