Hi friends! I hope everyone had a wonderful weekend! And for those who had a 3 day weekend…you lucky ducks! I on the other hand had an accidental 3 day weekend due to a Monday morning migraine! But thank you Lord, I feel so much better today!!!
So a little update on our boy Oscar, the ear inflammation will be a constant struggle…he has severe allergies and this will be a battle but thank goodness last Thursday’s episode is SOO much better. His ear is looking better and he is still meds for the rest of the week. Thank you all for your concern!
So another part of our $325 vet bill was Ralph last Friday afternoon…..he went in for a check up and some shots but when they drew his blood they found something…..a normal dogs white cell count would be around 600-700 and Ralph’s was only at 170 which is not good. I am worried but they sent his blood off to be tested yesterday so hopefully we will know something soon. The vet said that Ralph is the most unique dog they have ever seen. Everything from his personality to his mixed breeding makes him so special, they have never seen another one like him. And I have to tell you he is the sweetest thing ever, he has the most tender heart and he fills my life with complete joy…even when he craps in the kitchen!!!!!!!!

So did you all watch the Golden Globes? I thought they were great this year, I just love Ricky Gervasis!!! I loved that Sandra Bullock won and everyone was looking mighty fine but but…one person for me was the Cat’s meow…………………….Penelope, I mean wow! She is stunning!

OK, so I am adjusting to meals for one during the week and most of the time I seem to be eating vegetarian. Last night I made roasted veggies which were sooo delish!!!!!!!!!!!
Carrots, sweet potatoes, parsnips, red pepper, and onion…………….

Chop everyone up roughly the same size then drizzle with EVOO, salt and pepper! Throw the pan in a 425′ oven for around 30 minutes or until tender!

I had this with a small salad and some french bread! It was soo good! And I am even more excited because tonight these leftovers will become a roasted veggie soup!!! More on that tomorrow!!!!

    Hey girl, My mom made this sheet cake over Christmas and it is the best sheet cake I have ever had in my life! I can't make one because it is too good not to eat the whole pan! I have the Pioneer Woman Cookbook too and love it! Although not much in there adhears to my diet! lolLindsey H.

    That cake looks delish! I miss getting to eat vegetarian…I didn't do it often, but I would crave just veggies and they were so good. But I must have protein, protein, protein now! Dang the luck!
