So on Sunday I got a little antsy, with Matt’s new schedule I am not cooking 5-6 nights a week anymore and my kitchen was calling my name (in a Spanish accent)! So I wanted to use my new food processor and it was so fun! (ha, I need a life huh?) I made homemade salsa and some avocado relish with it, both turned out great! It works so good, I felt like a budding chef!

Next up is a recipe I got from my Best Friend Amanda ages ago, and this one simple recipe is the one I get the most calls on or have people asking me to make it! This is called ….

Easy Cheesy Chicken Childas!
– First up, cook 4 chicken breast…. I boil them for 25min because it is easy!

Here is all the ingredients you need: Big bag of cheese, 1 pint Sour Cream, 1 can Green Enchilada Sauce, Tortillas and small can green chili’s……

Once your chicken is cooked and cool enough to work with you will need to chop/shred it up into a bowl……..

Then add your can of green chili’s, 1/2 the bag of cheese, 1/2 the can of sauce and all the sour cream to your chicken.

Ok, now onto making the HUGE cheesy Childas…..just like this, then roll up and leave ends open

This recipe makes 6 Childa’s and they are so huge 1 per person will be enough!! You want to pack them in tightly, pour the rest of the Enchilada sauce on top and then the cheese!

These go in a 350′ oven for 35min or until cheese is melted and heated thru!

And then you have the BEST Cheesy Chicken Enchilada in town…we topped ours with my homemade salsa and a little Avocado relish on the side!!!

I also had this for lunch today, I think they heat up wonderfully!!!!!

    Those are my fav. enchiladas!!! The only ones I've ever made, Thanks Amanda! They are SO good as leftovers as well

    My brother is going to be bummed when he finds out these aren't his own creation. He likes to brag on himself for making them up!But they are really yummy!I might need that relish recipe. Or an invite over….

    Thanks for sharing the recipe! I actually made these last night…read your blog and then thought about mexican food all day! Deren & I are trying to be health conscious, so I substituted a few things. I used wheat tortillas, 2% cheese, and light sour cream (only used about 2/3 of the pint. still delicious!
