Fall on my plate

So after last weeks new recipes that happened to be filled with rich, calorie loaded ingredients Matt & I decided to “detox Savage Style” meaning grilled chicken every night with either veggies or a salad!! Way to go us! Well I was surfing the Kraft website for new recipes this weekend and I was inspired by one of their dishes and now I need to share this fall side with you………
“Fall on my Plate”
Ingredients:
2 Zucchini’s
1 Red Pepper
1 Squash
1 Yellow Onion
1 Eggplant
1 can of Fire Roasted diced tomatoes
Evoo, Italian Cheese, salt & pepper

You start by dicing everything up into about 1/2 inch portions

Then you will sautee everything but the diced tomatoes in EVOO on med-high heat until they start to get soft & brown
In a casserole dish open the tomatoes (undrained)and dump in………

Then add the rest of the veggies, mix well, salt & pepper then top with Italian Cheese

You will bake this at 350 degrees for 15min

Then ENJOY!!!!! This was a fantastic side to our grilled chicken!!
