Sunday Dinner

So yesterday I made dinner for Matt and we had my mom & dad over and I wanted to share my recipes with you all!!!!! Tons of pictures included! The first recipe I made up, I was “inspired” by a Sandra Lee recipe but the only thing I kept the same was the crust!

Nicole’s No-Nonsense Mini Pies

Ingredients:

Apple Pie Filling

Carmel Syrup

2 defrosted pie crusts

Vanilla, Sugar & Nutmeg

Here we Go:
1. Preheat the oven to 400 and spray a large cookie sheet with Pam

2. In a bowl combine Apple pie filling, 1/8 cup Carmel, 1 Tablespoon Sugar, 1teaspoon Vanilla and a Dash of nutmeg and combine

3. Cut each pie crust into 2 and then roll out each mini pie crust to look like this below…
4. Lay out each mini crust and fill an equal amount of filling in the center, then fold crust around filling like shown below.

5. Bake for 25min or until golden brown and filling in HOT!!! Then let cool for about 10-15min.

6. Drizzle more Carmel sauce over Mini pie, serve with ice cream and ENJOY!!!

Now before we enjoyed our Yummy dessert and I must say I did a FAB job they were soo yummy and tasted JUST like an apple pie….but before hand I made the Mar-A-lago Turkey burger which I made a couple of times last summer. I will say that although this is easy it is time consuming so be sure to read the directions completely thru before you make it or if you start it after work one night you will notice they must be chilled for 2 hours and you will be eating at 10pm! ha

Turkey Burger
SERVES 8 , 8 burgers

1/4 cup scallion, thinly sliced
1/2 cup celery, finely chopped
3 granny smith apples, peeled and diced
1/8 cup canola oil
4 lbs ground turkey breast
2 tablespoons salt
1 tablespoon black pepper
2 teaspoons Tabasco chipotle pepper sauce
1 lemon, juice and zest of, grated
1/2 bunch parsley, finely chopped
1/4 cup Major Grey chutney, pureed

1.Sauté the scallions, celery and apples in the canola oil until tender. Let cool.

2.Place the ground turkey in a large mixing bowl. Add sautéed items and the remaining ingredients.

3.Shape into eight 8-ounce burgers. Refrigerate for 2 hours

4.Season the turkey burgers with salt and pepper. Place on a preheated, lightly oiled grill. Grill each side for 7 minutes until meat is thoroughly cooked. Let sit for 5 minutes.

I serve this burger on a Onion Bun with Leaf lettuce and that is all! It may not seem like all these ingredients go together but they do! And in case you were wondering where to find Major Grey’s Chutney they have it at Homeland and it is on the aisle with the condiments.
