Hello, I hope everyone had a fun & relaxing weekend! We did… we went to the Thunder game on Friday which is always fun then Saturday we had Sushi ( our fav) and went to see Bride Wars! Which in case you were wondering was so good!

And as many of you know I usually make something new for dinner on Sunday and then I make a dessert because Marissa (my sis) comes over to enjoy dessert and some puppy love! I have fallen behind on sharing my recipes so here is yesterdays!
First of all Dessert was easy, I just made a Cherry Chip cake with Strawberry icing because that is Marissa’s favorite!
Next main dish is Rachael Ray……………..
Florentine Prosciutto Wrapped Chicken
Inactive Prep Time:
1 box frozen spinach, defrosted
3 tablespoons pine nuts ( I omitted this and it was still good)
1/2 cup ricotta cheese
1/4 cup grated Parmigiano-Reggiano
2 cloves garlic, grated or finely chopped Salt and freshly ground black pepper
A few grates nutmeg
6 chicken breasts
6 slices prosciutto di Parma,
1/3 pound 3 to 4 tablespoons extra-virgin olive oil
Preheat oven to 400 degrees F.
Wring out defrosted spinach in clean kitchen towel.
Toast nuts and combine with spinach in a bowl, mix in cheeses, garlic, salt, pepper and nutmeg.
Cut into and across but not all the way through the chicken breasts, opening them up like a book with a sharp knife. Season the chicken with salt and pepper. Fill each with a small mound of stuffing. Flap chicken breasts back over stuffing and wrap each breast with prosciutto to seal them, carefully covering the whole breast. Brush chicken all over with some extra-virgin olive oil and roast 18 to 20 minutes until cooked through.

Nicole’s Garlic Noodles!
All I did was cook some Spaghetti noodles, drain then ….. then toss back in the pot with some butter, a tablespoon of garlic, and a dash of salt! And it is Super Yummy!!!!!! I also served a green salad drizzled with EVOO & Fresh Lemon juice!
The whole meal was really good, and I will tell you that since there was alot of prep work with the salad and it being my first time to make this meal that is was not a 30min meal but well worth the time spent!
ps…. this is how I feel about Mondays………. Monday Shmonday!
