Me, 1999

I received a box from my parents with pictures and memories a few weeks ago and oddly enough Matt's parents brought  some tubs of the same for him last month. So I have been having a great time going thru everything and I have SO much to share with you all! Today I wanted to share with you these pages from my Leadership class in 1999 where I shared who I was and although I am so different now I am the same Nicole....
This is HYSTERICAL...... my limitations mostly are the same today... I am NO patience and I do hate to loose, just ask Matt! And I may or may not like things my way.  But many of my talents are the same, I am friendly, I have strong speaking skills and I can easily take charge and get things done that need to be.
I love this page and somethings are oddly foreshadowing for the future, a dolphin is who I would be which was the Tri Delt "animal" and then as an adult I have been active in trying to do my part to stop the Taji Dolphin Slaughter.
Also it asks me what flower I would be, I said a ROSE. Then fast forward 8 years on our second date my future husband would get me roses and on the card say "You are like a rose". The world works in weird ways doesn't it?
Lastly several times I mentioned Girls Just Wanna Have Fun the movie, OBSESSED is not even the correct word to describe my love of this movie. It spoke to me and also began my obsession with Sarah Jessica Parker! If you sadly don't know what movie I am talking about here is the vintage trailer....

We all change so much over the years but when you see it in writing the basics of ME are the same. Do you feel like you would still relate if you found your 17 year old selfs answers?

Tikka Masala

You guys!!! So I have never made Indian food at home and only truly eaten it like twice ever, I just don't know what to order... yada yada. WELL I found this recipe for Tikka Masala that happens to be vegan and I made it on Saturday and I just finished it for lunch today and OH MY GOSH This is soooo good! Really even if you are not vegan or are new to Indian food you MUST try this! My Mom is coming to Colorado in a few weeks and I will 100% make this for sure!
Matt loved it just as much as I did, it is full of flavor, earthy, stocked with veggies and I love the tomato base to it! I found this recipe on Food with Feeling...


  • Large yellow onion (1/2 goes in sauce in blitzed sauce, 1/2 is finely chopped)
  • 2 cloves of garlic
  • 1 inch of ginger, peeled
  • 10 sprigs of fresh cilantro (plus more for serving)
  • 2 tablespoons of olive oil, divided
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of turmeric
  • 1/4 teaspoon of ground cinnamon
  • 1 teaspoon of paprika
  • 1 teaspoon of salt (optional)
  • 1 1/2 teaspoons of garam masala
  • 400 g of canned plum tomatoes, not drained
  • 1 15 ounce can of tomato sauce
  • 1 small container of vegan yogurt**, roughly 5 ounces (I typically use So Delicious ensweetened coconut yogurt)
  • 1 15 oz can of full fat coconut cream or milk**
  • 1/2 head of cauliflower, chopped into bite sized pieces
  • 3 large carrots, peeled and finely chopped
  • 1 15 oz can of chickpeas, drained and rinsed
  • 1 cup of frozen peas
  • Optional for serving: chopped cilantro, extra yogurt, basmati rice cooked


  1. In a food processor, combine half of the onion, garlic, ginger, cilantro stalks, and 1 tablespoon of olive oil. Blitz until fully combined about 1 minute. (see photo above) Set aside.
  2. In a large skillet, heat the remaining olive oil over medium heat. Add in the chopped onion and spices, stir to combine and cook gently for 10 minutes.
  3. Into the skillet, add the plum tomatoes (with the liquid from the can), tomato sauce, yogurt, HALF of the can of coconut milk and the blitzed onion and cilantro sauce. Cook for an additional 5 minutes over medium heat.
  4. Add in the cauliflower and carrots and bring to a simmer. Simmer for 20 minutes.
  5. Once the veggies are tender, add in chickpeas, frozen peas and the remaining coconut milk. Stir to combine and let cook for 5 more minutes or until peas are fully heated through.
  6. Serve with rice and (optional) a bit more cilantro leaves and yogurt.

2 Weeks

Well 2 weeks is almost in the books for us being Vegan. I will say that during this span I have been 99% and it's harder for Matt when he is out visiting agents so he is about 75% which is great for us both.
Have I seen differences yet? I think it is too early, I do feel good though.... my energy level seems great and I am sleeping better. Spring is hard having migraines due to the snow storms moving in then out here in Colorado which kills my head but overall during the day I am a tad bit better. SO we are going to keep this up for the next 2 weeks and then assess how we feel. I think I will for sure continue this on but I could see us leaning towards pescatarian which would be adding in occasional fish and eggs only.
Has cooking been hard? Not really but the time has been short so I haven't gotten to do too much. I wanted to show you all somethings I have made over these past 12 days....
I made Orange Scones for breakfast and ya they are more like orange mountains than scones, next time I will cut them smaller! LOL, they were great and Matt loved them!
 Last night was the BEST so far, it's from the cookbook Chloe Flavor and this is the Vegan Ramen! I even seared off tofu for this one and Matt and I agree this will be made again..... and again....
 For our Saint Pattys day I roasted carrots, cabbage "steaks" with onion sauce and made homemade Irish soda bread! It was really good but I have always been ahead of the game due to my intense love for veggies!
 For our Irish dessert I made homemade Guinness brownies with "Baileys" icing! The icing was amazing and the brownies were good but you could tell the consistency was a little different!
 An example of a lunch I have been having is Avocado toast with sea salt flakes and tomatoes! Who doesn't love this??
I will keep you guys updated but so far so good. The biggest challenge so far is lunch. Planning out and making ahead lunches for Matt and I since just running thru a drive thru really isn't an option anymore.

We have made a change...

My last post talked about how I have been sick so much this year and how my migraines are taking over my life YET I appear to be doing everything right as far as being healthy. I mean I have another appointment with another neurologist scheduled, a botox for migraines consult with a neurologist scheduled and I am switching pills again. It is a never ending cycle. 
Let me say that I do not believe that I will ever be 100% migraine free, I do believe there must be a better way to live with this illness and still have a happy productive life. Matt is also in a rut, he works out and still he complains he just feels unhealthy. For YEARS we have toyed with the idea of going vegan and we have incorporated vegan meals into our life occasionally. One of his agents had migraines and after switching to vegan she is 75% better. 
So what are we waiting for? Is convenience worth our health? WHAT IF this could help with 50% of my migraines and give Matt a healthier and happier life.... WHY wouldn't we try this? And so we have.... This past Saturday we started and today is Day 4 completely Vegan!
Last Thursday we watched the documentary What The Health on Netflix and that was the final straw or push if you will to make us make the change. And for those of you who think I must have talked Matt into this, no..... he was the one pushing. He wants to try anything for me to get relief from my migraines and he is desperate for a change as well. We highly recommend this documentary and even if you have no desire to go Vegan watch this and think of ways to change up your diet. 
 I also loved this documentary which is another eye opening look at our food industry.....
Now we have no qualms about occasionally eating an egg or fish but we are really giving this our full effort to have an untainted experiment. This Friday night will be a free food day because a month ago we booked a St Pattys day cooking class with friends. But guys, WHAT IF this could really have an impact on my life and my health? I have hope it does, I hope that I will be one of the people with a positive outcome and then when I am feeling pain free I will not be missing that steak.

Hi Everyone, sorry I have been away but so far 2018 has not been very good to me. I want to update and vent to you all today!
Some of you may recall that I do a word of the year and this years is Wellness, you can read that post HERE AND so far I am doing everything I have set out to....
* Yoga 2xs a week since Jan 7
* Acupuncture 2xs a month
* Cutting back on fast food, only 1 pop per week
* Cut back to only having wine maybe once a week
* I have had a complete blood panel done
* trying new migraine meds

You see I am following my plan, I am proud of myself. But the thing is that this year has been horrible to me. For starters I have had a cold, a severe sinus infection and the flu which combined have put me down for literally like 3+ weeks of this year. My migraines have been OUT OF CONTROL bad. The new medicine I tried isn't for me so I am currently tapering off of that which is making me ill. I mean you guys it is very very discouraging and if I think about it too long it can make me very blue. How ironic this is my year of wellness and I am sicker this year than I have been in recent memory. It's not fair, you know... it isn't. I feel like how in the heck is it March, where did the year go? Oh ya, a fog of not feeling well.
I am going to get off this medicine and find a new start point hopefully in 3 weeks to try something else. I am going to continue to do yoga when I am not a flipping incubus of plague and I am going to focus more on eating healthy and just have HOPE that things will turn around. That is why I haven't been blogging much because I am honestly a bit of a Debbie Downer lately and I don't have much to say.
I have this dream that I win the lottery and instead of money I am given the option of never having another migraine ever again and I choose that. I honestly do not know what it is like to open my eyes in the morning and feel good, ready to get up and start the day. I would kill for that (maybe no literally but you never know how desperate I can be LOL)

Romantic Getaway

Hey Everyone! A friend of mine is headed to a relaxing and romantic weekend getaway and I was so excited to style her for the weekend! She deserves a great weekend and guy! This is last minute and on a budget so I only shopped 3 stores.... Macy's, Target and Old Navy! She already has great skinny jeans and black booties so I planned around those items, I also kept the jewelry simple using the same piece throughout the weekend.

I love this look for a travel day, distressed sweatshirt with or without a tee under it and the simple black booties! Comfy and Chic!

She is going to a romantic steakhouse dinner and I love this subtly sexy look. The heels are not too high because she is tall which will also help for comfort! I love the look of black on black and she should pair this with a red lip!!!

I assume there will be some sight seeing, maybe some shopping and I love mixing prints. This look will also be great to rewear throughout spring!

Saturday night will be a Hockey Game Night and I love the look of an easy jacket paired with a simple tee. I have given her two options both from Old Navy that I love.... Camo or this pink suede! So chic!

Lastly I wanted something casual for her to lounge in the hotel, sexy but not silly and I think these pieces will be good for a weekend away with a new boyfriend!
