9 Years Strong

 9 years, I mean WOW! And this Christmas Day it will be 11 years that we have been together. Sometimes it seems short and other times I literally cannot wrap my head around the fact that we have been married for 9 years TODAY! As you know this year has been tough, I mean really rough. We did get to travel over the Summer which was so much fun but other than that this was a year full of hardship.  But I am so proud of us that we made it thru, a lot of couples do not make it thru infertility and a final diagnosis like ours. And you know what..... this card was the most perfect card I have ever given Matt...........
9 Years is Leather which is really a perfect representation of our marriage:
Leather is Tough and Strong
Leather can be worn and still valuable
Leather is in it for the long haul
I knew immediately what I wanted to get Matt but getting it wasn't super easy! His favorite Cardinals player of ALL TIME is Ozzie Smith, the Wizard. And you all know me... I like a challenge and I found it........
 Matt was beyond shocked and excited that his "leather" gift from me was an authentic Ozzie Smith autographed baseball! I was so excited to give this to him and it took him a few minutes to wrap his head around the fact that this was REAL!!!!!!
I say it a million times on here... my love of gift giving and my gift of being good at it ... it's so selfish really, because I feel SO GOOD when I find the perfect gift and make someone happy!
 I also wanted a more thoughtful gift so I found this Wish Jar. Matt and I are going to write our wishes going into our 10th year of marriage and next year on our 10th anniversary we will open it back up, read it and see what we have made come true. Positive wishes is really what we need right now.
Happy Anniversary my Matty, making it 9 years is such an accomplishment with everything that has stood in our way over the years. And I will say it over and over there is no one else I would rather fight with. I love you!

Green Enchilada Soup

I have a GREAT recipe for you guys today and I wish I could call it my own but I cannot! My sister pinned this and loved it.... and I did the same! Don't you just love Pinterest? I mean after all these years it doesn't get old for me and I still get 90% of my recipes on there!
I made just like 1 or 2 tweaks in this recipe that I will note for you guys!!!
  • 1 can (10 ounces) green enchilada sauce
  • 1 can white beans ( I used 2 cans, I thought the soup didn't have enough "stuff" in it)
  • 2 cans black beans
  • 1 pound boneless skinless chicken thighs, or breasts
  • 2 cans (4 ounces each) diced fire-roasted green chiles
  • 1 can (10.5 ounces) diced tomatoes, optional
  • 4 teaspoons ground chili powder
  • 1 tablespoon ground cumin
  • 3/4 teaspoon paprika
  • Salt and pepper
  • 2-3 tablespoons fresh cilantro, optional
  • 2 cups chicken broth or stock
  • 1 package (8 ounces) cream cheese, softened
  • Optional add-ins: pepper-jack cheese, sour cream, fresh lime, additional cilantro ( The Pepper-jack cheese MAKES the dish, USE IT! I also added in some Ranch seasoning to my sour cream for a little Ranch Sour Cream and it was perfect on top)

  1. In a large crockpot (I use a 6-quart crockpot) pour in the green enchilada sauce, drained and rinsed white beans, drained and rinsed black beans, and fat-trimmed boneless skinless chicken thighs or breasts.
  2. Add the undrained diced fire-roasted green chiles, diced tomatoes (if desired, it's great with or without them), chili powder, cumin, paprika, about 1 teaspoon salt (I prefer seasoned salt), about 1/4 teaspoon pepper, coarsely chopped fresh cilantro, and chicken broth or stock.
  3. Cover and cook on low for 5-7 hours or high for 3-5 hours or until the chicken easily shreds.
  4. Remove the chicken to another bowl and place in the softened cream cheese (cube into smaller pieces) into the crockpot.
  5. Cover and cook on high for another 30 minutes or until the cream cheese melts completely and is easily stirred into the soup.
  6. Whisk the cream cheese until completely smooth.
  7. Shred the chicken with 2 forks and then add back into the soup.
  8. Serve with desired toppings. We love a big handful of pepper-jack cheese, fat-free sour cream, a wedge of lime, and some cilantro!
To go along with this dish I jazzed up a jiffy cornbread mix.... I made the mix according to the box and then added in 1/2 cup of Cheddar cheese and 1/4 cup fresh diced jalapeƱo! And then when I served these bad boys I drizzled them with honey! TOO DIE FOR!!!!!!

Turkish Coffee Reading

About 2 weeks ago my friend Melissa and I went to have Turkish Coffee Readings, something super new to us. Melissa like me is a believer of all things and in fact we share the same Physic here in Denver as well but we love trying new things. You can see where we went by clicking HERE

Turkish Readings are different, your loved ones aren't going to come thru that is a mediums job. At this reading Silvana uses her intuitive mind and Turkish teachings to look into our future or tell us more about ourselves thru the cups. 
 She pours the drink which is very very strong and thick coffee and you drink. Then you turn your cup upside down and she reads the blot you personally leave as well as the markings inside your cup. And let me tell you and I can speak for both Melissa and I.... it was unreal how accurate she was, it really is a gift.
For instance Melissa's cup had a ton to say.... things about her past, future events coming up and who she is becoming as a person that her and I both know to be true. Her cup was more talkative than mine, ha. My cup was different only 2 things came thru and they both came thru very strong. One was a current situation that she was 100% spot on and the other I will tell you was weird. So in my cup a "Stranger" came thru, now after the cup reading was done we each had our cards read and I also got the stranger card. Silvana was actually worried for me, I am NOT joking she said she feels like I have a stranger watching me, like an actual person. She feels me being watched and not in a good way. SO ya, that happened. And ya, she went into more depth but thats not for's been on my mind of course.
Other than the weird omen I received TWICE we both loved it. My cards were crazy accurate about things going on in my life and where she sees me heading in my life. This was such a neat experience both Melissa and I agree that we will absolutely be back to see Silvana again. 
You know this world and universe is far bigger than we could ever imagine and certain people and different cultures tap into things differently. You have to have an open mind and believe that it all works together in a beautiful cosmic chain. I am glad I am a believer of all things and that I enjoy expanding my mind and seeing what this world has to offer me.

Movie Monday!

You guys first of all who watched The Walking Dead last night?? It was horrific and AMAZING all at the same time! One of my favorite shows of all time mainly due to episodes like last night, man o man was it great. OK ok enough.... no spoilers here. 

I feel like all the best movies come out in the Fall, which just adds to the list of reasons I LOVE Fall. Last weekend I was lucky enough to see 2 movies I have been super excited about and I have been waiting to share it with you all. 
I will preface this review by letting you know I LOVE Ben Affleck, so there, I said it. But really you guys this movie is great. Matt loved it just as much as I did. Ben Affleck plays someone on the Autism spectrum who is way more than an accountant. His focus, smarts, drive all help him in this underground world he is a part of. This movie is different and so entertaining and at the end your like "Man, that was Ben F*cking Affleck kissing ass and taking names.... with his pocket protector" But really though check out the trailer....

I read this book along with everyone else I know a few years ago and I had even forgotten what happened... so the movie was kinda a surprise for me too. This is NOT an uplifting movie, nothing good happens but man Emily Blunt is a great actress. I honestly thought she was so amazing and really became Rachel from the novel. Now let me say, I saw the Accountant the night before and LOVED it so maybe if I had seen them in reverse I would of loved this one more. Don't get me wrong I liked this movie but it was so one note.... I don't feel like it ever reached a dramatic climax so the ending wasn't satisfying for me. I loved all the actors and I love seeing my books come to life but compared to the other movie this wasn't as great as it could have been to me. wah wah

LA Dreams....

Hey guys, TGIF..... AMI right? Today I am getting my hair done and I am thinking of adding in some color to my do! We shall see!
As you can see we are still on vacation pics but we have switched gears to my girls trip in LA! It was quick just Fri-Sun but it was still great fun! I never do things like this so it was nice to get out of my comfort zone and see an old friend!
 My friend also named Nicole planned this whole weekend and invited me, it was so good to see her! I can't believe we have known each other for OVER 10 years, I mean really. We met waiting tables in Okc at Mickey Mantles! I was the original Nicole so when she came on we all called her Chico, why? I have no idea now!
 After we all flew into LAX we had a little time and our AirB&B was 1 mile from the Hollywood walk of fame so I begged the girls to head over so I can experience it! I will say it was PACKED! I mean I knew it would but i was still shocked by the amount of people.
 We found some stars imprints but they were hard to find amongst ALL the tourists! This place was neat and right across the street was Jimmy Kimmel Live.
 I know I know.... the rule was DO NOT engage but they really pull you in. My face is a little shocked because I knew after we said "Cheese" they were going to expect to be paid, and they were, so we did. UGH! LOL
Right down the street was the Dolby Theater where they have the Oscars so I tried to erase all the tourists and imagine the stars on the red carpet!
 HELLO Hollywood! SO did we see any Celebs? Yes actually... one..... Adrian Grenier AKA Vincent Chase from Entourage had dinner with his date at the table next to ours. We were shocked at how SMALL he was. Like literally my size. wah wah
We started off Saturday morning with a yummy brunch and they even put the OU/TX game on the TV for me! BOOMER
 I wanted to see the beach of course so we took some time that morning to walk around Venice Beach! It was HOT, that California Sun was strong!

I wore a FAV new outfit of mine that will go great with ankle boots and a jean jacket or like here sandals. This outfit was super comfy to wear all day and nice enough that it was perfect for dinner on Saturday night also! I got all these pieces from my fav Evereve!
I HAVE to talk about this dessert and how something so simple can be one of the best desserts ever! This is caramel popcorn ice cream, with caramel popcorn and salted popcorn dust! Yes, really it is!! And this dessert we went crazy over.... it was creamy and salty and sweet and too die for! We had this at Paley on Friday night which is one of the top places to eat in LA right now!!
 So on Saturday afternoon we went to the "other" Venice Film Festival for the premier of When the Starlight Ends starring Jamie Frasier from Outlander. Yes, I know he has a real name but he is Jamie to all of us. My friend Nicole is a member of an Outlander fan group and we crashed their picture at the premier!
 Jamie Frasier was even at the movie...... he actually was suppose to be at the movie was backed out due to .... "conflict" with the financiers of the movie! HA!
So how was this movie??? I really do hate saying this... But I couldn't have HATED it more! LOL I am NOT kidding, the worst movie EVER.
After seeing such a loser of a movie we had a wonderful dinner at Salt Air in Venice and then stopped by for a nice cream night cap at Salt Straw which was super hopping!
SO..... the creepy Air B&B we stayed in looked MUCH MUCH cooler online. This was my room cute right? WELL>.... the first night when I opened the bed sheets there was an article of clothing from what I assume was the person who slept in it last. GAG. SO yes, I slept in dirty sheets all weekend! LOL
This weekend was such a fun change of pace for me and I love seeing new places so HUGE thanks to Nicole for planning this!! I am ready to do it again.... but in a hotel with clean sheets!

Top Eats!

When we get to go on vacation I spend quite a LONG time researching places to eat, I mean that is the most important thing right?!! So today for you I have listed out of favorite places in Savannah and Charleston!! In no order by the way!

* The Old Pink House, Savannah!
I mean we loved this place because the food was out of this world but also because this building was built in the 1700s! The Declaration of Independence was read aloud from the steps of this home. In the basement is the coolest bar complete with piano player and we loved everything about it! To learn more click HERE
* Hominy Grill, Charleston
You guys first off 2 words- Charleston Nasty! Yup that my friends is this glorious biscuit I had for lunch one day! Everything about this place was so homey and so good! Get there early the wait is NO JOKE

No, not just because I have seen this place on TV did we love it but because it was fresh, fast and delish! The Lobster Roll was great and the Oysters super fresh!! Check it out HERE

* Hall's Chophouse, Charleston
If you want a purely amazing steak set in an old style steakhouse staple this is the place for you! This is quite the Charleston staple and we really enjoyed our meal and the wine selection here! Make sure you have a reservation thats for sure! Click HERE to explore the menu!

First of all look how stunning this location is! Second a place named by Bon Appetit as restaurant of the year and a highly awarded in house chef..... Yes, Yes, and Yes! This place is TOP notch... add it to your list! HERE to learn more!
