It's DONE!

After 2 LONG months of yelling at our lender it is finally OVER!!!!!!!
Yesterday we closed on our new home in Castle Rock! It's been weird renting for the last year and some change but it gave us the chance to really get to know Denver and where we saw ourselves building a future!
It's super weird that we closed yesterday but then just came home back to our normal life here in the Townhome. We are letting the sellers stay thru July and we actually don't have a set moving date yet! The sellers will hopefully let us know within the week so we can plan for the BIG day! Now is the UN-fun part of packing and moving but lucky us this time about 1/3 of our stuff is still boxed in our garage and storage unit!
I am going to really enjoy the Farmers Market, Pools and riding my bike around Stapleton during our last few weeks here!

Tasty Tuesday

Saturday Matt golfed all day and I was pretty lazy all day.... which I LOVE! SO Saturday was the perfect night to stay in and eat on our patio here at home! In the past few years I have just loved more and more working with Asian/Thai flavors and this burger hit the spot! This recipe is adapted from Clean Eating Magazine.... I just simplified it!
You all must try this and don't be scared by the "Quick Pickle" of the veggies like I use to... it really is easy and worth it! And ya ya ya.... our frozen fries are not on the Clean Eating plan but it has been our guilty pleasure as of late!

Open Face Asian Turkey Burgers!

INGREDIENTS:
  • 1/2 cup rice vinegar
  • 8 whole black peppercorns
  • 1 tbsp maple syrup
  • 1/4 tsp sea salt
  • 1/2 cup peeled and matchstick-cut carrot
  • 1/4 cup matchstick-cut radish
  • 2 tbsp matchstick-cut jalapeño chile pepper, plus 1/4 tsp minced jalapeño, divided
  • 2 1/2tsp sesame oil, divided
  • 1/4 cup finely chopped red onion
  • 1 tbsp peeled and minced fresh ginger
  • 1 tbsp minced garlic
  • 1 lb extra-lean ground turkey
  • Zest of 1 lime
  • 2 tbsp packed finely chopped fresh cilantro leaves
  • 1/4 cup Panko Breadcrumbs
  • 1 tbsp reduced-sodium soy sauce
  • 2 whole-grain sesame seed burger buns, split and toasted
  • Arugula or other fresh greens
INSTRUCTIONS:
  1. In a small saucepan on medium high, combine 1/2 cup water, 1/2 cup vinegar, peppercorns, 1 tbsp maple syrup and salt; bring to a boil. In a small heat-proof bowl, combine carrot, radish and 2 tbsp jalapeño matchsticks. Pour mixture over vegetables and refrigerate for at least 30 minutes.
  2. Heat a small nonstick skillet on medium and brush with 1/2 tsp oil. Add onion, 1 tbsp minced ginger, garlic and remaining 1/4 tsp minced jalapeño and sauté until just softened, about 3 minutes. Transfer mixture to a medium bowl and add Turkey, Panko, lime zest, cilantro, 1 tbsp soy sauce, stir until well mixed. Form mixture into 4 3/4-inchthick patties.
  3. Heat a large nonstick skillet or grill pan on medium and brush with remaining 2 tsp oil. Cook patties for about 10 minutes, turning halfway, until browned and cooked through. (Alternatively, cook on a greased grill on medium for about 10 minutes, turning once.)
  4. Top each bun half with ketchup, greens and 1 patty. Drain vegetables, discarding liquid, and divide over top.
Semi-Homemade Spicy Ketchup!
TIP!! I make this ALL the time... for our fries, burgers, you name it this is so good!
Mix 1/3 cup Organic Ketchup
1 Teaspoon Sriracha
1 Tablespoon Soy Sauce
Dash of Pepper and Salt!
Mix and USE!

I Miss Him....

Today is Fathers Day and to be honest this year more importantly today is my Granddad's Birthday. It's been a little over 3 months since he passed and I still can't believe it is real. Literally my heart will not believe it. Granddad was our Summer Baby and we all miss him so.....
 Oma has good days and bad days and that is to be expected her life partner has moved on....
 I just wanted to take today to wish Granddad the Happiest of Birthdays and I know he can hear me when I talk to him out loud. I know he is still with us and that he visits us and watches over us from heaven.
 This was taken right around when Earl met my Grandmother (Oma) Hannelore....
 Granddad you were always SOO much more than a Grandparent you were a second Dad to me in more ways that I could ever express. I got 33 years with you and our bond was truly something special. I love you and I miss you more than I could ever say. Happy Birthday Granddad!

Becky's in DA House Part 2

After we headed back to Denver from Estes Park we had 2 more days filled with fun! I was so excited to take them to Castle Rock and show them the house we are buying and the community there! They both LOVED it... they went on and on about how perfect it was and that was SO nice to hear. It was just nice to be able to share that with someone! The Becky's then wanted to go see our office and visit Matt and that meant the WORLD to Matt and I!  The fact that they really wanted to see and experience our life here in Denver speaks so loudly to the type of friends they are!
Tuesday night was kinda our "Girls Night Out" and of course we took the typical front porch pics.......
 Becky K and I have a thing for Bravo Top Chef so of course I had to take her to one of the former contestants on Top Chef Masters place here in Denver... Euclid Hall! Becky was showing us how regal she felt at dinner! And the meal? TOO Die for! I mean really!
 Check this out.... it was meant to be we found graffiti with their name on it and you can see the storm rolling into Denver in the background!
 Next up I took them to this place I discovered call Upstairs Circus and it was the COOLEST thing ever! I mean for real!
 This place is a "Craft Bar".... a full service bar and then you go to the Craft Bar and pick out a project to make! I made a leather tassel necklace, BB made a leather clutch and BK painted a picture for her office! We literally had the best time! I cannot wait to take all my guests here from now on!
 On the last morning I took them to the Historic Union Station for brunch at Snooze and we then headed over to the Molly Brown house and took a tour!
I think you can tell that when I dropped them off at the airport..... they were exhausted... a sign of a wonderful trip!!!!!! xoxox

Becky's in DA House Part 1

When I picked up my 2 girlfriends whom are YES both named Becky we hit the road and headed to Estes Park! The 3 of us share a love of books, history and hauntings and we got ALL 3 at The Stanley Hotel!
 We took the History/Haunted Tour of The Stanley and it was super fun although our Tour guide was a bit of a dud to say the least. This is the Music Hall which is suppose to be one of the most haunted buildings on the property!
 I loved seeing original pieces from the 1800s and being immersed into the history of the building. And we all know I love me a good paranormal show and ALL of them have filmed here, so being where my favorite paranormal shows were filmed was awesome!
 This is Room 217, the room that Steven King stayed in and the room that prompted him to write The Shining! SOO cool!
 This is a little memento left by Steven King when he filmed The Shining the Mini Series at The Stanley!
 This hotel really does frame Estes Park, it is on the hill overlooking the town below and it is just stunning!
 This is the view from the front porch of The Stanley and we literally could not have asked for better weather while we were ..... which is a good thing because the hotel has NO AC!
 Would I JUMP at the chance to stay the night again? NO! The bucket list is crossed off... I will be back to visit but I won't pay $300 to stay in an OLD room with NO AC again! One and Done!
 How cute are we? ha!
 I was the Becky's paparazzi so I had to do a little Selfie!!!!
 On the way home we took the longer drive thru the Roosevelt National Forest and stopped at one of my favorite places called The Church on the Rock also known as the Malo center.......
 I mean doesn't this just look like we were transported to someplace back in time? This place was equal parts creepy and breathtaking!

 The drive was so peaceful and I loved seeing the mountains, streams and random cabins like this one out in the middle of nowhere!
 On Monday we spent the morning taking in Estes Park and doing a little shopping!
I felt like not only did I give them a check on the Bucket list but I showed them some true Colorado sites! Stay tuned for another post on our Denver shenanigans!

#yes

This past week I got the cutest package in the mail from OKLAHOMA!!! I swear my sister is the cutest and this brought such a smile to my face.....
 She asked me to be a Bridesmaid and in the cute package was Wedding inspiration, a cute card, nail polish, a picture and so much more! If you can see the "colors" swatch it's gonna be so cute and us maids are going to be wearing Coral! How fun!
 My sister has always been great with words and she wrote the sweetest note in her card, Thanks Roonie! I am so excited to share in her special day with her..... as the OLD maid with all the young gals! I'll try to not cramp their style!
Marissa was a Bridesmaid for me when she was only 15!! And of course I had both my siblings in my wedding to share my special day with and now I get to do that for my sister is so exciting! My cousin as well as Matt's sisters and brother were all in my wedding as attendants or ushers!
So now is the time to marry off the baby...... Marissa!

What I Wore Wednesday

I haven't done one of these posts in awhile so today seems like the perfect day!! While posting these couple of outfits I have realized I have a slight... denim obsession! I might need an intervention soon!! I have been manning the office this week while Matt is away on business so I have been calling my looks #girlboss! haha! 

I got this peach skirt at Nordstrom Rack for $19!!! I mean what a buy and I love pairing it with a piece from Anthropologie... that is what High/Low is to me!
 I am loving this new tank I got a few weeks ago from this store called EverEve, it can be dressed down or dressed up for dinner with a friend! You'll be seeing more of it for sure!

So I never shop at Banana Republic, not sure why but I don't! BUT this skirt screamed my name in the window and it had to be mine! Typically now it is on sale for $30!!!!! And the denim t-shirt from Anthro I love so much I got it in a second wash color last week! ha!
 Lastly I have used this top on several boards and it just rocks!! But beware it runs soon big!
