Super Bowl Eats!

I thought I would share with you all my Super Bowl Menu for this Sunday if you need any last minute inspiration!!! I am leaning in a more Mexican theme with this menu and it's hard not to for Game Days!

Crock Pot Chicken Sandwich!

The Super Bowl is ONE week away and I have the perfect Game Day Sandwich for the gang at your house!!! This was so good and it was the perfect leftover too! I found this recipe on Pinterest but I changed it up a little and made it a little more "semi-homemade"!!!

Crock Pot Chicken Sandwich!

For the Pulled Chicken:
2 1/2 pounds boneless skinless chicken breast
2 pounds boneless skinless chicken thighs
1 small onion, diced
4 cloves garlic, minced
28 ounces diced tomatoes with green chilies, 2 cans - like rotel
2 tablespoons red chili powder
1 tablespoon cumin
2 cubes chicken bouillon
For the Chicken:
* Place diced onion and minced garlic in crock pot. Place chicken on top. Open cans of tomato and pour that over the chicken.
* Sprinkle chili powder, cumin salt and pepper over top. Put bouillon cubes in.
* Cover and cook on high for 4 hours, or low for 8 hours.
* Drain almost all of the juices and season more to taste, if necessary.
 TIP!! I didn't go thru the hassle of draining this...... most of the liquid cooked up and I just used a slotted spoon when serving!!!
To "pull" your chicken use 2 forks and pull the breasts apart..........
 To Build Your Sandwich!
* Hawaiian Slider Buns is what I used and it was great! I did toast them under the broiler for about 5 minutes before piling on the toppings!
* Top with your chicken mixture
* Then I used cheddar cheese slices and I popped them under the broiler again until the cheese melted!
* Top with Picked Jalepenos!
These were delish!!!!! Enjoy!

Let me start by stating that I LOVE Andy Cohen, I love the Housewives and I LOVE all things Hollywood gossip so this book was a no-brainer for me! If you are going to read this book you have to go ahead and get the audio-version... I mean for the past fews weeks have Andy Cohen read to me on my drive to and from work each day is awesome. Some parts stupid but sometimes he literally makes me laugh out loud. I swear we would be best friends (said me and a million other housewives)!
If you are looking for a fun easy read or listen to break your winter blues than this is it!

American Sniper

After I fell in love with Unbroken the book (and the movie) I saw the movie preview last Fall for American Sniper and I knew I had to get the book first! Although I didn't love American Sniper as much as I loved Unbroken as a book I still very much enjoyed this book. I love learning about something new to me. 
Sunday Matt and I went to see American Sniper and I loved the movie so much! Whether you agree with the war or not this story is incredible. I thought Clint Eastwood did such a wonderful job with this movie you really felt like you were there with Chris.... and getting to know him as a man with his family really emotionally connects you with him even more. At the end of the movie it wasn't so much that it was sad (it was) but it was so touching. Seeing the actual footage of his memorial service and seeing all of the lives Chris touched makes it impossible not to be touched. Matt hit the nail on the head when we left the theater... I asked him if he liked the movie and he said "Ya, and I sure wish my life mattered or had as much purpose as Chris Kyle's did" exactly. 
 And let's talk about how incredible Bradley Cooper was...... I had seen interviews with the real Chris Kyle and read his book and at times on screen I could of swore Bradley was actually Chris. I thought it was amazing and such a job well done.
Do I recommend both?? Heck ya I do!

Update!!!


So as I have said my goal this year is to be healthy, I am still using everything I learned via Weight Watchers over these past 2 years but loosing isn't my goal anymore. BUT.... the past few weeks my pants have felt a little big on me so this morning I stepped on the scale for the first time since about November and I was pleasantly happy!!!!! I came in at 137!!!!!!!!!!!!!! Last time we talked I was 143! So I am down 6 pounds!!!!
It has been exactly 2 years this month since I was 177 and I started this journey loosing weight..... SO long but worth it. I never gained anything back over these 2 years only lost and maintained which worked for me... and that makes me feel proud. Slow and steady is my key. So in exactly these 2 years I have lost 40 pounds!!!! 40! That is like 2 of my dogs together.... crazy!
I just had to share with you all! I was a 12-14, L-XL.... I now wear a 6 (which is baggy) and I wear Med-sometimes small!
Thanks for sharing in this journey with me and being my sounding board! 40! Sounds good to me!

What I'm Loving....

I thought I would share with you all things I am LOVIN on this Wednesday!!! And more specifically things I love that keep me organized and focused!!!!!!!
I tried out a different planner last year but I came back to my Erin Condren... they are just the right size and perfect for people who love to color code and use stickers! (yes, I am 33)
Second, I got this Blog Planner from Easy and I LOVE IT! It is so helpful and keeps me on track!
For me I need to be reading a book for fun to get away from things and then I am trying to get back into the habit of reading a quick devotional each day. It's good for the soul!
I love these fun water bottles and always have mine on my desk! Drink more water goes hand-in-hand to my becoming more healthy goal this year!
And of course you need a snazzy bag to get all these goodies to and from the office or your carpool! 

I hope this list inspires you to organize and focus your life a little more.... it did me!

Golden Globes

So about last night...... for me the theme was "un-memorable".  From the show to the fashion, the whole thing bored me. NOW... I will say that Tina & Amy's opening monologue was amazing!! It really had me laughing out loud but then they disappeared? No more laughs after that!
The fashion? Most of the looks I liked but it was hard to pick out more than a few I loved. Here are 5 of my favorites.......
* This color red just popped and I thought she looked classy and flawless!
 * Yes..... I realize this might be on the worst list for some but I LOVED it! She is pregnant and this dress made her glow! She is always a risk taker and I just loved this look!
 * Va-Va-voom!! Take note Jennifer Lopez.... this is the way to turn heads.....
 * Could she look any prettier? This is perfection and I swear we should be friends in real life!
 * Oh how I love thee..... She always looks like a "Haute Couture" dream and she looked amazing last night.

So the bad???
* Yup, I did it... I put Mrs. Clooney on this list but I hate it. Not only did she look beyond bored the entire night but I loathe the gloves.
 * Sorry Jennifer but this dress aged you, it is too young or too something.....
 * Tina....... why?
 * This is just awful, I think it looks like a bedspread that is chocking the life out of her boobs.
 * J Lo.... people love you and they love this look but didn't I see you in a revealing, bedazzled dress the last... every single time I see you? We get it ... your hot.... but come on....
Do you agree with anything I said or no? HA!!!! Happy Monday friends!
