I'll Be Back.....

Hey Guys......I won't be posting for the next week.....Tomorrow Matt and I are headed to Vail for a Friends of Farmers Golf Tournament and Banquet then when we get back in town Friday I pick my family up at the airport!!!!! I get my family for 4 whole days!!!!!
I hope everyone has a wonderful 3 day weekend!!!

Cherry Creek Food and Wine Festival

2 Weekends ago Matt and I went to the Cherry Creek Food and Wine Festival and we just had the best time! It was stepping outside the box for us, going to something new without knowing anyone but this event had me at FOOD and WINE! Did you hear me say Gourmet FOOD???????
 All the restaurants in Cherry Creek participated and we got to have some really thoughtfully prepared tasting portions from them all!!! There was live music, perfect weather and we even met some new people! Next year we will dress us a tad more.....I realized this was an event in an exclusive area but we were shocked by how dressy it was! :)
 The food was AMAZING! We had everything from this delish baby Key Lime Pie to Sushi to Ribs to Pasta!!!! And the sizes were enough to fill us up!

We just had a wonderful time, the perfect Date Night!

I spent my entire SUMMER everyday on the way to work and on the way home listening to the Trilogy above and sadly yesterday I had to say goodbye! It is weird how spending around 30+ hours listening to these books, learning about the same characters just how attached you become! I LOVED these, I loved everything about them and the person who read the audiobooks did an amazing job! It was like listening to a movie everyday in my car!
These were a great fun, summer read and I canNOT wait until the movie comes out next month!!!!!

Well.....this is like day 4 with a Migraine and I am sick of being sick! I have things to do, need to go to work and I have Style Boards piling up but instead I have a migraine.... a migraine that won't go away! I have noticed that I tend to get one when there is a change in the weather or pressure outside which is bad news because there is a chance of storms here for like the next week! What I would not give to never have one EVER again.....for real. Just letting you guys know I am here but that is why my posting has been spotty. If you need me I will be in bed..............

Favorite Fun Activities with Matt
We love every Sunday riding our bikes a mile to the Stapleton Farmers Market, getting breakfast at a food truck and enjoying the morning!!! I just love it! We love going out to eat on Friday night and catching up over a glass of wine! We also love snuggling on the couch with the animals and catching up on our DVR!!!!!

Biggest Pet Peeves.
I am a rather impatient person so when people are late or they do not follow thru with something they say they will do really gets me. Slow drivers drive me insane (pun was intended) and people who invade your personal hello! I am standing here can you please move away???

Typical Day
I get up at 7:15 to have coffee, breakfast and get ready for work! On the way to work I listen to a book on tape (currently the Maze Runner Series) and then I get to work at about 9!! I blog first thing in the morning at work and check my email of course!!! I eat lunch at the office with Matt and then I head home for the day around 3 or 4 and yes, I am so lucky! When I get home I clean up the house, cook myself dinner since Matt works late and then comes my favorite part of the day........... When I lay on the couch with the animals and watch DVR or Netflicks! So to sum this up, yes.....I am very boring!

Kings of Leon, Incubus, oldies all day.......Chicago, Foreigner, Eagles, 70s music, Michael Buble', John Mayer........the usual suspects!

For the record this is SOOOO hard! So here is just 10 of my favorites!

Fall Football Patio

Starting in a week or two it is that time called....maybe... "Pre-Fall" where Football reigns but not quite pumpkin take over!!! I wanted to turn my Summer patio into Fall Football Frenzie!!! Here is what I have done for our Town Home Patio, I can't wait for it all to come in! The rich Crimson just screams Fall Saturdays to me!!! And I think this will be very easy to transition into Pumpkins come October!!! I am excited to get this all fixed up before my family comes Labor Day weekend!!!!!!

Meet Barsilinga

Yesterday really made a dent in my heart and I was up all night thinking about the Elephants and knew I needed to do more! So I am so proud to announce the adoption of my Orphan Barsilinga! He was found on Easter Morning 2012, a true blessing I think! I have fostered an Elephant a few years back and I am blessed to do it again.....I was drawn to this little guy........

Barsi is now a little over 2 years old and is thriving at the DSWT!!! His story touched my heart, broke my heart and yet filled my heart with love all at the same time! It would be a DREAM come true to go visit the David Sheldrick Wildlife Trust and I have been saying that for years, they truly make a difference in all these animals lives.
I will keep us all updated on his progress as I get the updates from Africa!

World Elephant Day

Hello Friends! Today is very important to me and if you are a long time follower than you know this cause is dear to my heart! Today is World Elephant Day and my heart aches that these amazing creatures are being poached, orphaned and on the verge of possible extinction. I hope todays post will educate you on something you may not have already known about and I hope this post will instill in you a desire to make a difference!



Elephants have roamed the wild for 15 million years and today this iconic species faces their biggest threat to survival due to continued ivory poaching. As long as there is a demand for ivory, elephants will be continued to be killed for their tusks. Today it is estimated up to 36,000 elephants are killed annually, that’s one life lost every 15 minutes. Learn more about this CRISIS HERE!

You guys......I have never before looked at a picture of myself at my heaviest and then myself now.....I'm embarrassed! Why didn't anyone tell me? Ok, I take that back my brother told me....isn't that what little brothers are for???? Thanks (sarcasm)
Ok....back on track.............
As of today, I lost 19% of my body weight and I am officially down 35 pounds. It doesn't seem like that much to me until I get my Weight Watchers magazine and I see that they feature people for losing 35 pounds....that is what puts it into perspective for me. And FYI....I still have 5 more to go! 136 is the end game for me!!! And I have 2 months to do it.....until we go to Mexico in October!!!!

Let me say something to everyone wanting to loose weight fast......... it doesn't work.
This took me 18 Months!!!!! 
No fad diets, no pills, no wraps, no creams no nothing but plain and simple watching what I eat and increasing my activity. During that time I never gained it back, I only maintained in between losing and that is truly the only way to go.

Here are the things I did that help me...........

* Weight Watchers!!!! I did this religiously for the first 9 months by tracking everything I ate but after that I knew what foods where what points and what I needed to eat and what not to! (that was a mouthful, pun intended) WW is the way to is a lifestyle NOT a diet!
* No goals........... What you say??? Think about it....everyone who says I am gonna do this and loose 10 pounds this month is setting themselves up for failure. When you do not meet that goal you say "F it" and then gain back and have to start over. I just lived my new lifestyle and if I screwed up over the weekend I got back on track on Monday and then the number I see on the scale every week was a bonus!
* I also only aimed to loose weight every other week......the other weeks I tried to maintain that weight, which really worked for me!!!!!!
* NO Pop (NO diet pop which is awful for you), NO Mixed drinks, NO Beer....only Coffee, Tea and Water plus the occasional glass of wine!!!!

For everyone who wants to know about me "testing" the Vegan waters...........

I have played around with being Vegan for years and the main reason is my LOVE for animals and the way they are treated. But it has been hard for me to go cold turkey. The last 6 months I have found a way to make this work with me.....Part time Vegan. The book above is the perfect thing for people like me and the weight loss is an added bonus to this lifestyle! I eat vegetarian about 4-5 nights a week and now I incorporate at least ONE Vegan meal a day! Taking out meat occasionally is very helpful in losing weight! It works for me, you can look into it for sure! I have been posting some new Vegan meals on my blog lately that I have tried and loved! You can find my first 2 recipes HERE!!

And guys.....I am NOT at all the expert, my way is not best but people have asked and I wanted to share with you things that have worked for me! The #1 thing..... Patience! I am still a work in progress and yes, I still love donuts and cake in moderation!

Get ya some Gazpacho

My husband thinks that Gazpacho is literally drinking salsa but I beg to differ.....when made the right way it literally tastes like Summer....plain and simple! I love soup and I really love's the perfect lunch to take to work with you! I love it anytime but for me when I have been eating particularly bad I will mix up a batch and eat that for lunch for a week and I feel more healthy. Not at all a cleanse but a re-set button for me! I have to share with you my recipe and I usually just add everything to taste or eyeball it but I will be a little more helpful than that for you!!!

Get Ya Some Gazpacho!!!!!

Get Your Ingredients!
5 Plum or San Marzano Tomatoes
2 Large Red Bell Pepper
1 Red Onion
3 small Jalepenos
3 garlic cloves
1/2 cup of cilantro
1 Medium Cucumber seeded
Salt & Pepper to taste!
1 Tablespoon Sugar
3 Tablespoons Lime juice
3 Tablespoons Red Wine Vinegar
2 Cups Tomato Juice!
How To!
** DO NOT blend it all together at once.....or parts will become mush and some parts will be too chunky, blend each veggie individually!
1. Each go around....rough chop your vegetable, toss it into your blend with a drizzle of EVOO and blend! DO not puree it too will want a little consistency to your soup! (see below)
 2. I add each batch to a large bowl as I go..... This is my red pepper batch.
 3. Make sure you seed your cucumber and tomatoes so your soup will not be too runny!!!
 4. My secret ingredient is SUGAR!! It brings out the flavor of the tomatoes!!!! Just do it!
 5. Some recipes call for White wine vinegar but I prefer Red Wine, it gives the soup more depth! That is what you are doing here creating a flavor profile!
 6. Now....until you add your tomato juice your bowl is gonna look weird....but I promise once you add the juice it will turn into the rich red color that we are after!
7. You will be surprised at how much salt you will need to add.......I added about 1+ tablespoons!
This soup gets better the longer it sits, so my lunch today will be perfect!!!! I like to add a dollop of Sour Cream (vegan) when I eat mine to add richness!!!
TIP!!!! You can add 2 cups of diced Watermelon to this dish easy......but do not blend long at all....or it will be mush! This adds a little sweetness and I would then omit the sugar!!!
I really hope you love this as much as I do.....this dish will make you feel healthy and satisfied!

This morning while drinking my coffee I saw this segment on The Today Show and it really got me thinking that I could more than likely benefit from this challenge as well! I started brain storming thinking about what I should give up:

And the whole time I knew what I needed to give up but I didn't want to admit it! Drum roll please.....
Yup, it is true no more snagging a deal at Anthropologie, No more buying the pieces on someones style board, no more internet shopping while watching TV in the evenings....NONE! I am detoxing for the month of August and I will not buy shoes, accessories, clothing, nail polish or makeup! I have so many outfits I buy more before I can even wear what I just bought, it is a real problem..... there is nothing like the feeling of coming home with my new loot! Are you with me???

So Today Show I am with you, I will be strong and I will be better for it......or my bank account will be better for it!
