Catching up with Nicole......

I am sure you have noticed that I haven't talked about my weight loss since the move to Denver and the reason why is simple.....Because there is nothing to tell. Since I have moved I haven't lost any weight but on the up side I haven't gained either. I am holding steady at 144. Which is 33 pounds lost since I started this journey! I wear an 8 or a 6 instead of a 10 or 12!
I swear I have to get back on it......I really want to see 139 on the scale and hit the 35 pound milestone! It has been hard to try and lose weight while getting to know Denver and the Denver food scene! HA, but really! We go to Mexico in October and I really want to hit the 130s even if it is 139!! Wish me luck!
As you know I have posted homes we love here in Denver on the blog and I have talked about how the plan was to build here in Denver for a Feb 2015 move in......and plans change. It has been 2 weeks now and I have processed the information and I am moving forward but here is what happened.....
Matt is 1099 as a business owner (Farmers Insurance hired him to run his own district) and since we just moved here are essentially screwed. We qualify by Income, Credit and our past home ownership but since we have not lived IN Denver for 2 years we cannot get a mortgage. You HAVE to have 1-2 years at least of W2 or 1099 tax returns IN Colorado. So since Matt was W2 last year in Ohio and we moved for this position which is 1099 we are unable to buy a home. It is insane and stupid.
I mean you all know we picked out this Town home in 5 days without even seeing it and if I would have known this would end of being a 2 year home we would have picked different. But it is what it is and here is what we are doing to help us settle with this home........

We never decorated or really settled since this was suppose to be less than a year of living so......I have thrown myself into making this a home. That is why we are getting a King bed and moving the Queen into the guest make it nicer for our guests! We are also moving my large desk in the loft into storage and putting in a cute Daybed we picked out at Ikea that folds out into a full size! This weekend we are getting that storage unit and cleaning out the garage to make room for my car! YAY, no more parking on the street and hail damage! SO we are making the best of a small home and this time next year we might try to get a mortgage again. It is always something with us.

Master Bedroom Makeover!

Matt and I are moving up in the world.......we are finally getting a KING size bed!!! YAY! So if you know me then you know I have been throwing myself into this full force! I love the upholstered bed look and we finally decided on this bed from West Elm. Here is the rest of our new Master Bedroom Makeover, everything here has/will be purchased!!!

I like strong colors and I also love neutrals but I have decided to make Grey and Red the main colors with the accents being in Silver, Yellow and Blue!!! What I like about the bed and the bedding is that down the road I can make turquoise the accent color or even oranges for a Tuscan feel!

I Love Rock n' Roll

 You know music feeds my soul, it always has..... wether I am dancing to a song, discovering a new artist or enjoying a concert. I have probably been to over 150 concerts in my life, it is just my "thing"!! My favorite genre of music is old Rock thanks to my parents, I just feel like I should have been born in the 70s! I totally missed my time!
When I saw that Don Felder (Eagles), Styx and Foreigner were coming to Denver I told Matt we HAD to go! I LOVE Foreigner, really I do!! Matt wasn't so sure about going at first and in fact I was worried he was going to be a party pooper! BUT........once he realized he knew most of the songs we had the BEST time!
We saw the concert at Fiddlers Green in Denver which is a great venue, we loved it and with the mountains and sunset in the back ground it was perfect! Can't wait to go back!

 We sat on the lawn in the back and the seats were perfect, we could kick back relax, dance and take it all in!
 " Juke Box Hero"........

Really guys, this might have been one of my favorite nights since our move to Denver, so enjoyable and so much fun!

Monday Movie Madness

It has been too long since I have posted some movie reviews huh?? And it's not because I haven't been seeing any..... So today I decided I would narrow them down to my 3 favorites to share with you!
 I am going to admit it,  I was very nervous going in to see Planet of the Apes....the first one scarred me. I know the apes are not real but the abuse that was shown in the first movie broke my heart and may or may not have made me cry. But when the trailer for the sequel came out it just looked SO good I had to give it a try...... AND I am pleased to say that this one was not like the first, yes you really feel for the apes and their predicament but not in the way you do in the first! The special effects of this movie are incredible and it is visually stunning! In this movie you will fall in love with Caesar as he takes his place as leader of the apes and I loved the new cast including Keri Russell! This movie has heart, action and leaves you wanting more! Go see it!

 So......Deliver us from Evil is based on a book that I recently read....... the true story of Ralph Sarchie a NYPD sergeant who realizes his "calling" is based in the paranormal. Ralph actually worked with Ed & Lorraine Warren as well as Father Malachi Martin a world renowned exorcist. (Yes, that sentence just came out of my mouth and yes, it's my "thing" let it go.)
The book I loved and it was amazing hearing his stories and learn how he went from NYPD to working with an exorcist. The movie adaption is "based" on the book....the facts are there but the story is filled in for the movie. I loved it! It was such a thriller, no gore thankfully and the story really pulled me in. It isn't a conventional movie but I LOVED it!

Oh Transformers we just can't let you go!!! Was this the best movie? No, Was this movie too long? Yes, Was Marky Mark a great addition? Yes! This movie is what it is fun, action and the addition of a charming Mark Walhberg make this the perfect Summer block buster! Short and Sweet!

Shiitake Mushroom and Lentil Asian Tacos

One of my favorite things since living in Denver is Door To Door Organics!! #doortodoororganics 
It is a local and organic delivery service that charges no delivery fee, that is amazing! I get mine delivered once a week and I subscribe to the "Local Bitty Box" a small box filled with an assortment of local fruits and veggies each week! The website is amazing also..... you can grocery shop via recipes! So when I find something I want to make I click buy and all the ingredients for that recipe will be in that weeks box! Yes, this makes me beyond giddy!
This week I picked out a yummy Asian recipe and I have to share it with you, it was THAT good! (Ignore the check marks on the ingredient list)

Shiitake Mushroom and Lentil Asian Tacos



  1. For the sauce: Place the garlic in the bowl of a food processor fitted with the cutting blade; process until minced. Add the herbs and process until pureed. Add the remaining ingredients [miso, honey, soy sauce, red pepper flakes, orange juice, rice vinegar and sesame oil] and process until the sauce is evenly mixed. Transfer to a serving bowl; set aside.
  2. Bring 6 cups of water to a boil in a 2-quart saucepan. Add the lentils and ½ teaspoon of salt. Reduce the heat to maintain a simmer, partially cover, and cook for about 20 minutes, until tender. Drain.
  1. In a medium nonstick skillet over medium heat, heat the oil until it flows like water when the pan is tilted. Add the onion and a pinch of salt; cook, stirring often, until the onion is softened and translucent. Add the mushrooms and another pinch of salt and cook, stirring occasionally, until the mushrooms soften and release their liquid. Once the liquid evaporates, add the remaining 1 tablespoon oil, and cook until the mushrooms and onions brown. Stir in the cooked lentils and the cider vinegar.
  2. Stuff each tortilla with the mushroom-lentil mixture, carrots, avocado, microgreens, and miso-herb sauce. Serve immediately.
I know the ingredient list seems long but I promise by the time your lentils are cooked you will have prepare everything! About 1/2 of the ingredients were things I already had at home which made it easy! And I didn't have carrots so I used romaine lettuce and just avocado to garnish mine! This also reheated perfectly for dinner the next night!

The Broadmoor

Last weekend I surprised Matt by planning a mini-getaway to The Broadmoor in Colorado Springs! We were only able to get in last minute due to a few cancellations which worked out for us!! I just wanted to spend some time just Matt and I relaxing and reconnecting amidst our busy lives. 
The Broadmoor is everything everyone says it is, this is nicest place we have been to. This place is pure luxury hidden in the mountains of Colorado Springs which lucky us is only 1 1/2 hours away. This place has anything you could ever want and they do a good job at making you never want to leave......except for the little detail of how expensive it is. Hence us only being able to stay one night! ha!
Friday night I was able to get us reservations at The Penrose Room, the ONLY 5 Star and 5 Diamond restaurant in Colorado. I have worked in fine dining for years and we love eating out nice but this was by far the most over-the-top place we have ever eaten! And yes, actually it is worth every penny! Matt and I each had a 5 course dining experience complete with after dinner cheese course and a bottle (or two) of Pinot Noir from Monterey, Ca! 
The place is stunning, they have a dance floor and live Jazz band to complete the experience! This is a once in a "blue moon" place!
FUN- Take guesses at how much this meal cost us by leaving me a comment! Just for giggles!
 I got Matt and tee-time at the Broadmoor's Championship East Course on Saturday and I was his caddy for the day! Geez, men take golf so seriously might I add! The course was beautiful and the weather was perfect.....It was a really nice day and Matt loved it which made me very happy!
 The grounds are breathtaking, this place is not only modern but keeps with it's historical touches and theme! I was very happy at this Resort, it was somehow relaxing and exciting at the same time. And yes, I sure did find the pastry shop while I was there and had my first Cronut! Too die for!
 The Broadmoor has a hall lined with all the famous people who have stayed here in their 90 year history. Everyone from President Obama to Peyton Manning.
A few things while we stayed we got to do is spend an afternoon at the spa, have breakfast in room overlooking the lake from our patio and then when we arrived back from dinner Friday night Champagne was waiting for us in the room!
 Matt and I can not wait to visit again but it just might be another year before I talk him into spending the money! Visit the website and check it out HERE!!!

Savage Trip - Part 3

On Saturday July 5 Matt's Dad and sister had to head home to Oklahoma and it is such a shame because Saturday was my favorite day! Saturday we all were in Georgetown, CO and we got tickets to ride the Georgetown Loop Railroad and take a historic Mine neat!
My Mother-in-law planned this fun day out for us and when we heard the train coming around, I swear we were all like giddy teenagers....Or, maybe that was just me??

 How beautiful is this view????? I am 100% gonna take my DuBois family here for this same experience, it was a true Colorado day I I was truly on vacation! And who doesn't love trains?
 And yes, since we went on a train I not only wore my "Conductor" pants (railroad stripes) but my 4th of July gear! HA!

 We got to ride in one of the open train cars and it was perfect for seeing the sites and pictures taking! Not so perfect if you don't want to sweat to death!
 The journey followed along side this rushing creek....very serene actually. Although I didn't get to see any animals and that disappointed me!

About 1/2 way thru the train ride we got out to tour an old mine that hasn't been working in over 75 years! It was really neat and crazy how once you went into the mine it was 40 degrees! This actually is the original entrance to the mine....
 How much do we look like tourists?? Us  + our new camera.....we are so silly!
 Ok.....this was the coolest....this is actual fossilized handprints from the miners. I am betting this mine was haunted, or at least I would like to think that. AND I may or may not have pillaged a mine rock for my own keeping! ha

 We had such a fun afternoon on the train, so glad we glad we got to do this!
After the train I wanted to fix dinner for everyone at the house Matt's family rented in Georgetown so I thought how about an all American Shrimp Boil??? It was so good but not quite a 1 pot meal......1/2 way thru we realized this wouldn't fit and we had to get a second pot! We all dug in and enjoyed ourselves! The recipe I used is HERE!
 We had been going non-stop all week so Sunday while the boys golfed us girls had a relaxing pool day and cook out back at the house! And I still might be burnt from this afternoon, really!
 Colby reminds me of me......she instantly loves my animals and wants to snuggle them all. She has 2 dogs of her own and it is true once you truly love a pet your whole heart opens up!

Savage Trip - Part 2

It was nice that for 1 week Matt and I got to play tourist in our new city & state which of course included a round or 2 of golf for the guys! They played a beautiful course in Golden, CO. 
 After the boys got burnt on the golf course we all met up for the Rockies vs Dodgers game!!!!
 I love going to sporting events and it was so fun being able to share that with Matt's whole family!!

 It was a beautiful night for a game complete with peanuts, beer and brats! Matt and I even for one night put on our Rockies duds!!! Go cards!

 4th of July we got the true Colorado experience.........Red Rocks! The beginning of the day I thought I literally might melt but then after a 30 minutes down pour (we hid in our cars) the weather cooled down for a perfect evening!
 We saw Smashmouth, Sugar Ray, Uncle Kracker and Blues Travelers! While the concert was going on you could see all the firework displays across the city behind the stage.....very neat!

 And yes, walking all those steps to your seat, to the bathroom, to your seat and then to your car is BRUTAL! I literally was sore the next day!!
 Red Rocks does live up to it's name, this place is really something you have to experience just once! In September Matt and I are going to see Kings of Leon.....can not wait!
