33 Years Young...

 Today is this handsome devils 33rd Birthday!!! And sadly, this is the first Birthday of his we are spending apart! Matt is working in Chicago all week so I am sending this message across the miles! This week in October which kicks off with our Anniversary and includes Matts Birthday is my favorite week of the year! I love making Matt happy and being a bright spot in his life. Matt is caring, kind, passionate and I wish him the best Birthday! I love you! xoxoox

6 Years.....

6 Years ago today we said I DO! In some ways it seems like yesterday but in others it seems so long ago that it is hard to remember this special day! We were in Oklahoma and it was a beautiful sunny 70 degree Fall Saturday....perfection! I spent the day in our suite with my girls getting ready and watching a scary movie marathon! I do remember being relaxed all day, I remember that I loved nothing more than spending that day with my family. Matt spent his day with his guys at his parents cooking out. 

Matt and I have had our ups and downs but what always remains is our love. And honestly there is no one else I would rather fight with! truth.

Guilty Pleasure!

I think we all know I have quite a few guilty pleasures and oddly my love of Paranormal Shows is not the one that embarrasses me......but......my love for the Dr. Phil Show! It's like Jerry Springer met a real doctor and I can't get enough! I DVR the show everyday and it is like getting to peak inside the world of people who are so different than you are.

Sizzlin Style

It has been a few weeks since I highlighted any of my "Outfits of the Day" with you...so now is perfect! You might recognize this one from when I talked about different ways to wear "Oxblood" this is from The Limited! And yup, that is a rubber band holding the bow on my belt down! Gotta do whatcha gotta do!!! This scarf I found on Etsy! You can find such gems there!!!
 I love me some Casual Friday wear!! Sometimes I dress up my jeans but the past few weeks I have supported my favorite teams.......Go Broncos!!! And who says a little Stella and Dot jewelry can't go with a tee?
 Yup, the JCrew inspired flower necklaces are still all the rage....or at least I am hoping they are! This cute fall flower/lace top I paired this with is also form The Limited! It is really comfortable which is a HUGE bonus for a long work day!
 Target ALL day! If you can't tell lately I have been really into maroon and navy! People always ask and the elephant necklace is from J Crew Factory online!
 Gingham and Leopard? Sure!
 This is yes, a tad "Spring-like" but I was scraping the bottom of the barrel this day it would seem!

Theeeereeee Back!




You like those???? I could not have expressed the way I feel any better!!!! Sadly, it looks like this round of botox did not work. It has been 3 weeks and nothing.....in fact I am coming off one of the worst weeks in awhile. But hey, they said it could take up to 3 rounds for this work...so come December I will 100% try again! I am very sad but still hopeful. I can not live like this. (imagine me screaming that and having a tantrum) This week has been so awful and when I am in a really bad cycle it is so hard for me to stay positive. Gosh, I can't imagine how tired you all must be hearing of this.....I completely get it. Sometimes I think.....maybe Matt and I should discuss having a baby but then I get so sick I get sad and think....how could I? When I am this sick it takes everything I have just to get thru the work day... let alone care for another human being. 
Ahh! I am over this melodrama! Thank you all for the positive vibes, I feel them and you make me feel so loved!

I need you.....


Blogger friends and prayer warriors......I need you. Well actually others need you. I don't mean to be so vague with you but the details are not mine to tell. I need prayer for my family and then for another close to ours. Someone in my family is going thru tests trying to find out why their health is declining. (declining might now be the best word but they are needing an answer to some scary symptom)  The waiting game is the worst and it is hard to get your spirits high in any situation like this...I can't imagine. So just pray that my family finds....answers, healing and can stay positive!

Second, a dear dear friend of mines Stepmom is in the hospital due to massive bleeding on the brain. This was sudden, shocking and so scary for her and her family. They are currently running tests with neurosurgeons to figure out a plan on how to proceed. Please pray for the Mom who needs relief from pain, pray that God will guide the doctors and pray that her family will feel his peace!

Fall Roast Chicken Dinner

I have pinned countless Roast Chicken recipes on Pinterest so a week or two ago I decided to combine them all in a easy approachable way for a delish Fall dinner!! Matt loved this....he went on and on without me having to ask! So husband approved people!!!
And let's just get this out of the way........Yup, she is upside down! Didn't realize it until later but hey....she tasted good!
 Need!
3-5 pound Chicken
Fresh herbs : Sage, Thyme, Rosemary (any combination will work)
Butter, EVOO, S&P
Apple Cider Vinegar
Apples, Sweet Potato, Potato (as much or as little as you want)
Carrot, Celery, Onion
Orange- I chopped her up and put it in because I had this in my fridge! I stuffed the orange inside the chicken too!

How!
- Peel and chop up all of your veggies then toss into a roasting pan or casserole dish can work too!
- Chop your apples but do not peel and throw them into your pan also! TIP! These will pretty much disappear but this gave the broth and veggies the best taste!!!!
- Give all your veggies a nice sprinkle of salt and pepper then drizzle with EVOO.
- Next, drizzle your veggies with Apple Cider Vinegar (about 1/4 cup)
- Plop your chicken on top and slather with butter! Yumm!!! Salt, pepper and any other seasonings you would like.
- Chop up your fresh herbs and toss over veggies and chicken!
- Cover with foil and cook at 325' for 1 1/2 hours!
- Uncover and finish at 375' for another 30min-1 hour depending on chicken size! I did an hour!

This was So good and all we had this with was reduced fat crescent rolls! I also had this for lunch the next day and then used left over chicken in a soup that week too!!!!

At last someone took all my favorite Paranormal stories/people and put them into a fictional book! I am sure you would only recognize the people and stories if you are crazy like me but within the first 40 pages I knew 100% the author had "loosely" based these people off of Ed and Loraine Warren! This book kept me guessing and questioning what on earth could be happening and where the author was going to take me next but that is a good thing about this book! Yes, even I got scared reading in bed from time to time. And I loved the teenage girl that this book was told thru. I loved this book and it is a perfect October read! Book Club gals in Oklahoma....... Read it!!!!!!!

TV Tuesday!

Who else is loving my catchy Blog titles this week??? Me me me! ha! I think we all know something I LOVE about Fall by now......TV! I enjoy having something to look forward to as Summer wraps up, a new show to check out and I already have a few I love. Here are 4 of my favorite new shows!
* American Horror Story Coven!
I LOVE it.....true this isn't "new new" but each year is new so.....it counts! This season is set in New Orleans and is about witches of course! One look at this promo poster and I couldn't wait! Do you love it? And ya, it's twisted don't judge me!
 * Sleepy Hollow
I am loving Sleepy Hollow on Fox and in fact this was the first show to get renewed for a second season already so says Entertainment Weekly! This is a modern day crime show with ancient elements thrown into the mix and Fox did such a great job! Are you watching it??
 * The Blacklist
Ok, ok....NBC you win! Sometimes when they promote the crap out of a show that isn't always a good thing but.......in this case it was! I am loving this new crime drama starring James Spader and in fact I love the leading lady even better! You guys have to give this one a try!
 * Trophy Wife
So I am usually not a 30 minute comedy gal but I am loving Trophy Wife with Malin Akerman! This is cute, funny and just well....30 minutes of fun!
I can't forget my favorite oldies:
Boardwalk Empire, Walking Dead, Vampire Diaries, Revenge.....and well no, I don't have much of a life off my couch! ha!

Movie Monday!!!

 Saturday Matt and I went to see Captain Phillips which is based on a true story of a Somali Pirate attack on a cargo ship. Tom Hanks was the lead and he was fantastic like always, he was likable but strong two things this character needed to be. This movie was really interesting, an inside look at a story we all remember from the news just a few short years ago. A movie that once again always makes me think....what would I do? This was intriguing and slid over to the thriller side of a movie from time to time. Our only complaint? We wished they would have shaved off about 15minutes or so!! Friday night we rented a movie that I really wanted to see in the theater....The Purge. Just the premise of this movie is so unique....a future America where 1 night a year you can "purge" yourself and kill anyone! I mean unique in a way that I hope this NEVER happens! ha! This was R so I was worried about gore but honestly this wasn't bad at all... I was nervous for nothing! We both really liked this movie, if you want a good scary/thriller(ish) renter then this is for you.

Updates....

Hi Guys! How is everyone?? Is Oklahoma holding up after yesterdays sad OU/TX loss? Go figure huh?
I thought I would update you all on my weight loss and migraines!! Let's do the good first......

Finally, finally finally.....I have lost 25 pounds! I have told you that this past month all I can focus on is feeling better.....trying to move past my migraines so weight loss has not been in the front of my mind! But slowly but surely...I hit 25!! I currently weight 151 and I started at 176 in January ! I am no longer a 12 but an 8 (in most stores) and no more XL but L and the occasional M top now from time to time! Yay me! My next goal is 5+ more by Christmas!
I am going to try and get back into tracking my points! I did so well for like 6months but now I slack.....isn't it weird how the simplest of things can be so hard to do?? I am also going to try and post more recipes and things that do or do not work for me!
How are you guys doing?? Anything I can help you with??? And hey, fluctuating is ok and staying at the same weight is ok! It takes time doing this the old fashion way!

Now the bad-(ish)! If you know me then you know I love to use an (ish)! Ha! Botox.....now I was told it could take up to 3 sessions over 9 months and I am well aware of that. And it has only barley been 2 weeks so I am not sure yet how this is effecting me and I am hopeful. But this week I have had migraines. Several times this week last night in fact and currently. As soon as I am done blogging I am going to lay down....feeling good for the work week is always the goal. So here's to hoping it gets better!

Easy Fall Dinner...

 Saturday Morning Matt and I went to the old Historic Pickerington downtown to have brunch at a favorite of ours....Village Crepe. The Fall colors are starting to show here so we took a walk around old downtown and we just loved the fresh leaves!
 This house amazing mesmerizes me! I mean not only is Ivy (maybe) covering most of their house but look at how pretty this house is in fall. Don't mind the yard but it was a favorite of mine on our walk.
 THEN when I got home I had the most wonderful Care package from my bestie Becky! I mean look at this...how exciting....I love every single thing! Seeing the fall leaves and my Fall surprise has gotten me in the Fall mood!

 I have the 2 easiest and yummiest Fall meals that anyone can make!!! This one first up is actually one of the first recipe my Mother-in-law gave me. This morning I searched my blog and could NOT believe  I have not blogged about this yet!!!! This may seem like a lot of ingredients but most of these cans were around .80. This can be made for 2 like I do for Matt and I and then have leftovers or this would be great for a family.

Crock-Pot Chicken Tortilla Soup!

TIP! This can be as little or much of any ingredient you like....by just adding another can.

Need!
- Chicken- You can use: canned, chicken you cooked yourself or I got a rotisserie that I then shredded.
- 1 can Rotel
- 2 cans Tomatoes (I used Fire Roasted....the BEST thing ever)
- 1 can corn, 1 can white hominy and 1 can yellow hominy
- You choice of 2 cans of beans: Pinto, Black, Kidney or Great Northern.
- Chicken stock
- 1 packet Ranch mix and 1 packet Taco mix.
 HOW!
- Open all cans and pour everything in ONLY draining the beans but do not rinse. Pour in all the other veggies juice and all.
- Add both packets of seasoning and then add your chicken
- Add as little or much of the chicken stock so you can determine how thick or thin you like it. I usually use around 1 1/2 cups!

** Put this in your crock-pot on low for about 5-6 hours! OR You could do high for 2 hours!!!!***

We then serve ours over crushed tortilla chips, with cheese and a dollop of sour cream!
Enjoy guys.....this will stay good in the fridge for days!!! I LOVE taking this to work for my lunch!

If you know me then you know I need a dessert and this week I combined a recipe I pinned with WW guidelines! I am so excited to try this tonight and the "filling" was SO good! 
TIP! You could also use this filling as a dip with cookies, in a pumpkin trifle or a parfait!

Marshmallow Pumpkin Ice Box Pie!

Need!
- 1 Low Fat Graham crust
- 1 cup pumpkin puree
- 1 13oz jar of Marshmallow creme
- Dash of cinnamon, Dash of vanilla
- 1 tub of Fat Free cool whip
 How!
- Combine the pumpkin, marshmallow, vanilla and cinnamon in a mixture until smooth! Then add in your tub of cool whip....only mixing until combined and lumps are out! And here is where you lick the bowl!
 Then you literally pour it into your crust and put in the fridge for at least 3 hours! That is all! I think tonight I am going to drizzle some caramel sauce on top!
I will say both my Mom and I had a hard time getting this to set up.....so thanks to my Mom for a brilliant idea......she put hers in the freezer for about an hour and she said it was the best "ice cream" pie ever!!!
