3 in ONE day????

This is KD on Jimmy Kimmel and it is laugh out loud funny.....must watch! Once again I am always reminded of how nice, down to earth, funny and friendly our team is!

Long Long Sleep

This is the book I mentioned yesterday with the cryostasis tubes!! I got this book last Friday at book club and my friend Lindsay brought it! It was exactly what she said it was......different, fun and a easy read! I read this in 3 nights and this whole "idea or theme" was so fascinating to me!!! If you are looking for a fun Spring read set in a future society then this is for you! Loved it!


Matt wanted to do things during his time off that he doesn't normally have time for ........painting! Matt found a picture online and just from looking at that picture Matt was able to free-hand draw this picture of a MX Rider........
If you notice Oscar was there for moral support and to be project manager, he is so helpful......
Matt is putting on the final touches to the paint after he sketched it in pencil, it is not full color......I love the pops of color and the black and white base!
And here we go.....Matt actually gave this to his Dad yesterday who no doubt loved it! It is crazy and surprising how talented Matt is! I am very proud! This picture is amazing!
I am glad he got to spend some time doing something out of the "norm" before he heads out for Ohio!

New Day Please....

Do you have days where it feels like the weight of the world is on your shoulders? Where not one thing goes right but things unravel right before your eyes? Do you ever have days where you want to just disappear? I doubt it is only me but in this Facebook crazed (me too) world everyone always presents such a picture perfect front and no one ever lets on that things are less than perfect. I am reading a book about a girl who is occasionally put into cryostasis and when woken she is the un-aged but any amount of time has passed........and yes, I am weird but I am wishing I had a cryo tube right about now.
I have a tendency to get dark and think.....why me? why is everything so hard? when will everything fall into place? And on and on and on...........

I have a prayer that I cut out of a Oprah magazine awhile back and I recite it over and over and pray that it will give me comfort. I want to share it with you.......

May today there be peace within.
May you trust God that you are exactly where you are meant to be.
May you not forget the infinite possibilities that are born of faith.
May you use those gifts that you have received, and pass on the love that has been given to you.
May you be content knowing you are a child of God.
Let this presence settle into your bones and allow your soul the freedom to sing, dance, praise and love.
It is there for each and everyone of us. 

Finger Licking Good

So I made the Pioneer Woman's Spicy Dr. Pepper Pork last week and used it as she suggested in tacos and it was so unique and yummy of course I had to share! I have been on a PW kick lately...maybe it is because I got her new cookbook and I am feeling inspired!!!

Spicy Dr. Pepper Shredded PorkIngredients
  • 1 whole Large Onion
  • 1 whole Pork Shoulder ("pork Butt") - 5 To 7 Pounds
  • Salt And Freshly Ground Black Pepper
  • 1 can (11 Ounce) Chipotle Peppers In Adobo Sauce
  • 2 cans Dr. Pepper
  • 2 Tablespoons Brown Sugar
Preheat oven to 300 degrees.

Peel the onion and cut it into wedges. Lay them in the bottom of a large dutch oven.

Generously salt and pepper the pork roast, then set it on top of the onions in the pan.

Pour the can of chipotle peppers over the pork (include the sauce.) Pour in both cans of Dr Pepper. Add brown sugar to the juice and stir in. (NOTE!!! I only used 1/3 of the can of chipotle's and it was SO spicy for beware!!)

Place lid tightly on pot, then set pot in the oven. Cook for at least six hours, turning roast two or three times during the cooking process. Check meat after six hours; it should be absolutely falling apart (use two forks to test.) If it's not falling apart, return to the oven for another hour.
Remove meat from pot and place on a cutting board or other work surface. Use two forks to shred meat, discarding large pieces of fat. Strain as much of the fat off the top of the cooking liquid as you can and discard it. Return the shredded meat to the cooking liquid, and keep warm until ready to serve. (You can also refrigerate the meat and liquid separately, then remove hardened fat once it's cold. Then heat up the liquid on the stovetop and return the meat to the liquid to warm up
Serve on warm flour tortillas. Top with shredded lettuce, diced tomatoes, grated cheese, avocado slices, salsa, and whatever else you'd like.
These were SOO good and I will 100% make these again maybe just using a tad less spice!HAHA...I am a baby! The next day Matt used the pork to have on buns and he loved it like that also!

Tail Wagging Tuesday!

I haven't blogged about my kids lately so this is just a long long over due post about the most important people (animals) in my life!!!
Here is my beautiful cat Isabella.......... She has the most beautiful people eyes! She is my "first born"!!
Here is my Ralphie........he is just so handsome! This past weekend was his 5th Birthday! Happy Birthday Roo....can't believe we rescued you from a parking lot when you were only 3 weeks old! I wish for one day he could be as small as my hand again......he was so so cute! They grow up so fast......hehe!
Here is our Oscar........I could just melt in his big brown eyes! I just love this bossy little guy!
Here is our very own Benjamin Button......Abner, was sick and frail when we adopted him...and our vet guessed he was around 11 years old. But now he is full of life and happiness, last we checked our vet now thinks he could be as young as 8 years old!
Bella was contemplating stepping outside yesterday........until a leaf fell down and scared her! :)
This pretty much sums up what all my boys do all day while I work!!! Whatever floats their boat!
Oscar is just big boned so you he is showing off his goods! He is so silly!
You know I love me some animals......and yes, I get many sleepless nights thinking about what is in store for them..........relocating 17 hours away! Moving with 4 animals seems like a logistical nightmare to me! But we don't have to think about that just yet!

Memories to keep....

I wanted to do something nice for Matt that he could keep......something that could go into his new office in Ohio that would remind him of home. So......when I did the "Surprise Happy Hour" for Matt I got these matted prints and I passed them around for everyone to sign and write their "well wishes"on.........
I don't know what or how Matt will decorate his new office but I thought these prints and frames would go wonderful with anything........
This way every time Matt walks by these once they are hung in his new office I hope that he will smile, remember everyone who cares and feel a little comfort home.
And........Matt moves this Friday, I have a sick stomach thinking about it. About how Matt will feel going on his own, to live God knows where and to start a new life right away while I am here working and taking care of things at home. I worry about silly things....
- I hope he will eat well
- I hope he will get down time and find a place to stay that makes him happy (does he have somewhere to live? NO, men are so crazy)
- I hope his new job starts off well
And.....this list can go on and on! So just keep Matt in your prayers! (And that I don't loose my mind in the coming months)

District 12

So....I think the question is who DIDN'T see Hunger Games this weekend???? It is kinda exciting hearing that a movie I loved is now the movie #3 top grossing opening weekend movie of all time!!
I just loved this movie.....I thought it was perfect...just what I hoped for!!!! You can tell they had a big budget and every actor cast was perfect....Hello, Stanley Tucci!  Katniss......was amazing......she is so pretty and Jennifer Lawrence's acting was top notch. You 100% do not have to know anything about the books to watch this movie, so don't let that stop you! I was on the edge of my seat the whole time and I was so sad when the movie ended!

So to anyone who was a hater about this I say! Foo-EE!

Thankful Thursday!

Hi Blogger is a special Thankful Thursday......This morning I had the honor to help in welcoming home our Oklahoma 45th Infantry Brigade after a 13 month deployment in Afghanistan.  The ceremony was held at the National Guard Hanger at our airport........
This was such a special and humbling ceremony to be a part of and we were quickly reminded of the price of Freedom as we honored the 14 Oklahomans who did not make it home today.
We had several short speakers as the anticipation grew while loved ones waited for the soldiers grand entrance! It was a really special atmosphere.....
This is right when they opened the hanger doors and 170 (not all the brigade) soldiers marched in to cheers, tears and a standing ovation.
Below are some of the very special Oklahoma soldiers who are near to everyone's heart.......and on the 5th row stood my "Brother-in-law-to-be" Michael. We are so very proud......and even prouder that he returned home with a Purple Heart.
Here is my stunning Sister-in-law Colby shortly after being reunited with her fiance Michael! We are all so excited to have him home and we look forward to their wedding this fall!
I am excited as I look forward to the day later this year that my brother will return from his deplyment. And as thoughts and prayers are with all the military serving and their family.

21 Jump Street

Last Friday night Matt and I went to the Warren Balcony to watch 21 Jump Street and I knew this could go 1 of these 2 ways...
1. Insanely Stupid and the previews showed all the funny parts
2. Clever and funny
And after reading a ton of great reviews in my magazines my hopes were high and l;lucky us we were not disappointed!! This movie was funny and the two of them together (Channing and Jonah) are perfection! I will say this is Rated R due to the F-word being in like every sentence but honestly it fits and it is what you would expect these days (whether that is good or bad I am not sure) ! If you are looking for a funny movie to laugh out loud in and to let your mind escape.....this is for you!

Ohio Update! Thankful Thursday.....

 Hi Friends! If many of you recall today was the day that Matt was going to move to Ohio.......but this past weekend after realizing all that goes into a move like this Matt was able to push it back. Now, Matt will be leaving the last week of this month in order to be in Columbus on April 1...where he will play a little golf with his new bosses! We are thankful for the extra 2 weeks!
Last night my mom had a dinner for our family where we all celebrated Matt's big promotion and upcoming move! We are all so proud and a little sad of course. We actually even met my sister and my cousins new boyfriends for the first time! Exciting times at the DuBois household!

I also have MORE BIG news............... yesterday I was offered a new job.....same position as a Petroleum Landman but a new company. They offered me more money, I will go back to working from home AND.....wait for it.......they are 100% going to let me take my job to Columbus where they will FedEx me my projects back and forth! I truly feel like things seem to be falling into place more!!! I mean talk about a dream?!? I am very thankful. Yes, I will still be here for a few months I mean you don't sell a home, move a house and buy a new one over night.....but you all will be the first to know when we do!!!!!
