Thankful Thursday

Hi friends, you know what I am thankful for today? Well tonight I am thankful to have the opportunity to teach a cooking class! Yup you heard me and I am so excited!! This year with JH we have partnered and are giving our grant to the Bethel Foundation (you can learn more about them HERE) and this is a wonderful place where single mothers are given resources to help them get back on their feet! SOoo....tonight me and some of my JH ladies are teaching some mothers a "Mexican Made Easy" cooking class! I am teaching my easy and cheap enchiladas, avocado relish and homemade sopapillas!!! These are easy, inexpensive and the ingredients can be bought with food stamps for the most part! I am a little nervous but Thankful I am part of a organization that not only lets me give back but puts my "talents and hobbies" to good use! I will have a ton of pictures tomorrow! Wish me luck!

Paranormal State

 I always say this up front....we all know by now I have always had a thing for the paranormal...I love learning about it, watching the shows and reading books about the topic. Would I ever want something in my home? Heck no!!! Paranormal State is a show on A and E that I love, they work to uncover history which backs up the paranormal evidence they might find, they use Mediums and even do work with the archdiocese on demonic cases. With all that being said Ryan Buell is the star, creator of the show and leader of PRS. He has written a book a "behind the scenes" if you will of the show and his perspective on everything he has seen and been apart of. Here is the "jest" of the book....

I LOVED this book and I am not going to lie I did stop reading it before bed because there are a few chapters that are down right frightening IF you are a believer that anything can happen like I am. If you are not already watching this show......START!!!
The new season of Paranormal State premiers Sunday October 17 at 8c time on A and E!


So last night I took a super fun Sushi making class with my friend Jennie from work! The Francis Tuttle Vo-Tech offers the best classes at such a reasonable rate, you should check them out! Our instructor was born and lived most of her life in Japan so while she taught us to make sushi she also explained about Japanese customs, special Asian ingredients that she uses and where to find them!!
There were about 10 people in our class which was a good number.....except I will tell you that when it came time to make our own rolls some people got all "grabby" for the "best" stuff. A few people could of had a lesson on sharing!
Here is Jennie & I.......I met Jennie when I first started working at Paradigm, she is a closer at works at the north office!
Look!!! Can you believe it? I did it all by myself! I will tell you that this takes A TON of prep work, no joke! I think if I did make this at home for Matt & I it would take me uh.....hours!
Here I am rolling my sushi in bamboo just like a pro! She also taught us about the different types of fillers they use in Japan so we filled ours with egg, mushrooms, pickled ginger.......
I swear, I made those all by myself! I was very impressed! I have this saved in my fridge for lunch today! A tip she gave us is to "nuke" the rolls in the microwave for just a few seconds to let the rice get softer again!
And here is my California roll, it was alot harder to make with just rice on the outside, no seaweed to hold everything into place! And I even added some Masago! It was so good!
Over all we had a great time at the class and I highly recommend it!!!

She works hard for her money.....

Hi Friends! So about a year ago I showed you where I worked and now a year later it is somewhere new! Since I spend 40 hours a week here, work seems to be a home away from home. Here is the story I am an office manager for a new branch of a real estate company. While the space was being "built out" I worked out of a "break room" of another company for 3 months!
Here is the office park I work at........lucky me, it is 2 miles from my house! There is NOTHING better than going home at lunch to watch Racheal Ray with my dogs!
If you will believe it.....this is the break room that 6 of us (yes you heard that right 6) worked out of for 3 months! It was cozy and fun for about 5 minutes, I am so relieved I have my own space and desk now!
Switzers Locker Room is owned by former OU coach Barry Switzer and we worked out of their break room. They rent out storage units. And I made friends with their manager Erica!
Here are a few "during" pictures!! I survived 3 months of pounding, staining fumes, construction workers using the women's restroom as well as power outages and our AC Units being stolen on a 99 degree day! Whew!

This is "my room" the front reception area! Hurry up, hurry up! Across the hall is going to be a Morgage Company as well as a Title company.

Here is the after!!! This is the seating area near my desk! The walls are a tad more rust/red in person! And the room smells like pumpkin pie thanks to my Scentsy!
YES!!!! I have a desk! And yes, that is a purple pumpkin filled with Halloween Candy already! I am most excited about my window! 3 months with no window is brutal!

Huge News....

So last night I get home from work, walk in and turn on the TV always goes to one channel (4) and the news was on... the minute it came on was "Health Check" and the topic was "Migraine Gene Found"......Here is the jest of this amazing story.....
Migraine sufferers may soon be offered a cure after researchers in Britain uncovered the faulty gene responsible for causing the debilitating headaches. Unlike a regular headache, this condition brings on the type of pain that can cause vomiting and sensitivity to light, and keep people bedridden for days.What this defective gene does is to control how likely it is that certain parts of the brain - parts of the brain that are absolutely critical for the development of migraine - how likely they are to fire, and activate, and thereby produce a migraine.
But because this gene is at the very center of migraine development, by finding a drug or a compound that's active on the gene, well that then offers hope for something that will prevent these migraines occurring irrespective of whether these triggers are present or not.

Why am I excited?
1. People STILL think that migraines are just a "headache" some people myself included get from time to time...this shows everyone that this is truly a genetic disease that people are born with. And no, I don't "just" have a low tolerance to headache pain....if anything my tolerance is extra strong.
2. The hope that in the coming years they can use this information and offer better preventative medicine, possible a cure?! I do not know what it is like to wake up everyday without praying "please please let this be a good day" the thought of waking up and feeling like me and not coping with pain daily makes me so happy you do not even know!

I don't know, it is hard having this thing....something you can't "see", it is awful because people can look at me and see that I look "ok" but not realize that inside I am dying. Yesterday I was so sick at work I wanted to cry but my boss is out on medical leave and therefor I could not call in. I have been for the last 10 days having a migraine daily or possibly just dealing with the same one...I must break this cycle. I go to see my neurologist in Friday so hopefully we can try something new!

I just wanted to share this news and to raise awareness!

Happy 100 OU Delta's

Hello Friends!! As everyone knew this past Saturday was the HUGE celebration of 100 years of Delta Delta Delta sisterhood at the University of Oklahoma!!! There were about 900 people at this event, college girls all the way up to woman in their 60s & 70s!!! They showed a really neat slide show of our history during dinner that included pictures dating back from the early 1900s thru today, it was so neat to see. Although the night was very expensive this was a...once in a 100 years event and I am SO glad I went!
Saturday was also the first date Party of the year for the college girls and it kinda special that I was able to go with Marissa for her very first date party EVER. This is Marissa and her date Kole. He is a member of BUCS.....the "Brothers under Christ" frat. He was a nice guy!
Marissa and I!!! Funny thing is the tables were labeled by decades and since Marissa and I are truly over a decade apart we didn't get to sit together! But it was nice being at a table with pledge sister's I haven't talked to in a long time!
Matty & I! Matt was a tad overwhelmed.....we didn't know each other in college so this "Sorority stuff" is all new to him too!
This is Marissa and her girlfriend from High School Macey who is also a Tri Delt! You can see by their smiles how happy and excited they are!
Saradee was literally one of my very first friends at Tri Delt and I was so glad to see her. Saradee has two beautiful little girls and you can check her out here at her blog The Griffin Gang!!
And this was the final, I don't look like a sausage but what you don't see is the inside lining is skin tight! HAHA! Picture getting into Matt's truck!!! I had a great night over all and it really was a neat thing to be a part of!
Next week I get to initiate my sister with my own pin!!! I am very excited to be apart of such a special ceremony. I will be able to tell you about it only vaguely and hopefully show a picture or two....but when I say they are top secret about these things! I mean it!

I need a weekend...BAD! This has been a very long, stressful and mentally draining week at work! Tonight I am going to the movies with the husband, tomorrow I am volunteering with JH and then going to the Tri Delt dinner & dance!! I hope to round out the weekend with tons of fried goodness at the GREAT State fair of Oklahoma! Have a wonderful weekend friends! I will see you right back here Monday morning for a recap!


Ok, ok...I am sure that many of you are very worried as to where I am going with this.....stay with me. Ok, so tomorrow is the Tri Delt Centennial Dinner and Dance that Matt and I are attending in Norman. And I bought a dress a couple of weeks ago and have since tried it on for Matt and all my family......everyone tells me it looks great. The dress is black lace, form fitting with a fun satin sash and the lace lays in layers against my body. Well, under those layers what you don't know or hopefully see is that I feel like a sausage! I literally feel like I am stuffed into casing like a huge Brat with legs! I am not kidding people, everyone always laughs at me when I ask people if I look like a huge sausage! You more than likely asking why did I pick such a horribly uncomfortable dress? Well everyone loved it and I trust everyone to tell me the truth.....all family including my sister swears to me I do NOT look like a sausage! You know what I haven't tried doing in the dress? sitting! This could pose a great problem! Fingers crossed for me that I don't burst out! LOL....I will have pictures Monday.

Thankful Thursday

So today I am thankful that I have found another Food Blog that I LOVE! NO no I am not replacing the lovely Pioneer Woman but rather adding to the list!!! I LOVE Picky Palate.....and on Sunday night I made two of her recipes which I loved! Here you go.....
Cheesy Chicken and Wild Rice Casserole
3 Tablespoons extra virgin olive oil
1 medium onion, finely diced
3 stalks celery, finely diced
3 carrots, peeled and diced
2 Tablespoons fresh minced garlic
2 Cups shredded, cooked chicken breast
2 Cups steamed white rice
16 oz prepared wild rice
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 teaspoon garlic salt
Cheese Sauce
4 Tablespoons butter
1/4 Cup all purpose flour
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
2 Cups chicken broth
2 Cups shredded cheddar cheese
Top with 1 1/2 Cups shredded cheddar cheese
TIP!!! I have learned from Rachael Ray that when using celery use the leafy top as well (I never had prior)....and since I started that it does add a little something special!!!
Another TIP!! Instead of cooking rice which would of drug this hour long prep to 1 1/2 hours...I used these Ready Rice's and they worked great!! I used 2 Wild and 1 Regular as my substitutes!
1. Preheat oven to 350 degrees F. Heat oil into a medium dutch oven or pot over medium heat. Saute onion, celery and carrots until softened, about 10 minutes. Stir in garlic and cook for 1 minute. Stir in chicken, both rices, salt, pepper and garlic salt. Reduce heat to low.

2. To prepare cheese sauce melt butter into a medium saucepan over medium high heat. Whisk in flour, salt and pepper then slowly pour in chicken broth whisking continuously. Whisk until thick and nearly boiling then stir in cheese until melted. Pour cheese sauce into rice mixture then transfer to a 9×13 inch baking dish. Top with additional cheddar cheese and bake for 25-30 minutes or until cheese is melted through. Serve
Yumm......we had our casserole with a side of green beans and this was even better the next day for lunch!
Next up??? Dessert....and this one was so easy and it was TO DIE FOR, would I lie to you? About dessert? Never!
Chocolate and Caramel Apple Pie Galette3 Tablespoons butter

2 apples of choice peeled and diced
3 Tablespoons light brown sugar
1 teaspoon ground cinnamon
1 roll Pillsbury pie dough
5 Rolo chocolate caramels, unwrapped and quartered
Powdered sugar for dusting
1.Preheat oven to 350 degrees F. Place butter into a medium saucepan over medium heat. When melted add diced apples, brown sugar and cinnamon. Cook and stir for 5 minutes or until softened.

2. Roll out pie dough then pour cooked apples in center of dough leaving a 1 1/2 inch border around edges. Top with quartered Rolo’s then take edges of pie dough and fold over to create a pleated edge.

3. Bake for 30-35 minutes or until pie edges are golden brown. Remove and let cool completely. Before serving dust with powdered sugar
So, good.....Matt was a tad skeptical with the Rolo's and all but he changed his tune after the first bite!

F is for FALL~

Yesterday was the first day of fall even though it didn't seem that way because it was in the 90s in OKC but today the weather man gave us some good week we will see 80s and some 70s!! This past weekend I did some fall decorating....nothing Halloween yet but it is a start! I love getting fall mums.....
I want to get some real pumpkins to go here but right now it is too hot, the last thing anyone wants is rotting pumpkins on their porch!
I have these cute pumpkin stakes and for Halloween I have cute ghosts that also go in the flower beds! And of course our OU flag, it is football season after all! Boomer!

Oh ya, if you are wondering why our wall is two different shades of tan? When Ralph was a puppy he enjoyed eating wholes into the walls, don't ask me how but he did...nice to know he is so talented! So this is our swell patch only looks bad in pictures! HA! Well guys, I am excited this is my FAVORITE time of year......the colors, the smells. fall food, pumpkins and I am in heaven!
