Memorial Weekend MX Races....

So Sunday I went to watch Matt in one of his MX Races to cheer him on like a supportive wife!! They were held in Ponca City about 1 1/2 hours away and did I mention it was like 95 outside? I have NO clue how the guys wear all the gear and layers in this heat.......
I looked like a real scrub (does anyone say that word anymore?) but with the heat and the dirt everywhere I came home filthy, literally covered in a film of dirt!!!!
Here is Matt and his dad before the races................
Doesn't Matt look good in his gear? I will have to say I am quite fond of his "get up"
SO here is Matt mid race and I was shocked at how sick to my stomach watching him made me feel!! All joking aside this is so dangerous, his last race someone had to be air lifted to a hospital! I was a bit of a nervous wreck!
Matt was trying to cool down after a race, I mean I was dripping with sweat so imagine how he felt
This is the tent Matt, his Dad and their friends have set up....thank God for some shade!
Matt placed 5th in his division and has a cool plaque to show for it!!! This track in Ponca City is "big time" Matt informed me. They do pro races here for the speed channel!!
And this is me today..................I am a lobster!!! OUCH!
Overall I am very glad I went and so glad that my mother in law Micki went with me, thanks!!!.....but I will mention that using a porta pot in 95 degree heat made me crazy, I hate them and they kinda scare me!!! HA

My summer reading list

So I have ONE MORE book in the House of Night series, which have been amazing but while I am finishing those up my summer reading list keeps growing!!! So I thought I would share with you 5 books I am tackling this summer and maybe you would like to join me!!!!

I tried Eat Pray Love 2 years ago and I thought it was slow but with the movie coming out in August with Julia Roberts I am going to give this one more try................

HELP! I am on a bender......

Ok, so for the last couple of weeks I have been on a HUGE bender.....of eating CRAP!!! I ALWAYS cook dinner and I still always cook for just myself since Matt is not home for dinner anymore......but these past couple of weeks I have been picking up crap on the way home or eating my old favorite standby..Cereal! I think it is partly due to me working farther away from my house and by the time I get home all I want to is lay on the couch! This is not like me because cooking is one of my favorite things to do....but I MUST get out of this rut and fast waistline can NOT take this anymore! This is my "come to Jesus" speech to myself! (wink wink)

Oh Ali........

So let me say I was never an "Ali" fan last season of the Bachelor.....but like always this show has a weird way of pulling me in!!!! But this past Monday night on the premier of the new Bachelorette season I couldn't help but think "who dressed you Ali"? and "why oh why are those awful extensions in your hair"????
I know, I don't mean to be so mean but do they not have wardrobe people? Her dress was straight circa 91!! And to be honest the only cute guy was Justin "Rated R".....who is a real jerk, go figure!!! Just hop on over to to get the full 411 on this season! I love that site!

Key Lime WOW

SO I MUST share this recipe with you all.............I have made this twice in about 3 weeks due to the begging and pleading for this cake from my family!!! I mean wow, I was so excited that everyone loved this soo much and I know your family will too! Believe it or not this is a Trish Yearwood recipe ( I love her cookbook)......
Key Lime Cake!!!!

1 3-oz package lime-flavored gelatin
1⅓ cups granulated sugar
2 cups sifted all-purpose flour
½ tsp salt
1 tsp baking powder
1 tsp baking soda
5 large eggs, slightly beaten
1½ cups vegetable oil
¾ cup orange juice
1 Tbsp lemon juice
½ tsp vanilla extract
½ cup Key lime juice (from about 25 small Key limes or 4 large regular limes)
½ cup confectioners' sugar

1. Preheat the oven to 350°F. Grease and flour three 9-inch-round cake pans.

2. In a large mixing bowl, mix the gelatin, sugar, flour, salt, baking powder, and baking soda. Stir to mix well. Add the eggs, oil, orange juice, lemon juice, and vanilla. Divide the batter evenly among the 3 pans and bake for 35 to 40 minutes. Test for doneness by lightly touching the tops of the layers or inserting a toothpick. Cool the layers in the pans for 5 minutes, then turn them out onto racks.

3. While the layers are still hot, mix the lime juice and confectioners' sugar and pour it over the layers on the racks. You can pierce the layers with a fork to allow the glaze to soak in better. Allow the layers to cool completely as you prepare the icing.

½ cup (1 stick) butter, room temperature
1 (8-oz) package cream cheese, room temperature
1 (1-lb) box confectioners' sugar

1. Cream the butter and cream cheese. Beat in the confectioners' sugar until the mixture is smooth and easy to spread. Spread the icing between the layers and on the top and sides of the cake.

Note: The cream cheese icing is optional. This cake is beautiful and tastes great with just the glaze poured over it.

Soo...............I LOVE Erin and Maks!!! They are like Barbie and Ukrainian Ken!!! I LOVED their lyrical dance tonight on the finals.....was it perfect? No, but it was different and filled with passion! I hope they win tomorrow night and I really hope they are a real life couple!!! Good gosh she is so beautiful, tall and skinny and he is well.......smokin! ha!

Ricotta Cakes

I made this last week and not only did I love them but they made so many that my work, family and grandparents all gave them rave reviews too!! This is so easy and so good...they taste like sweet little cupcakes!!!!! Yumm...................
Ricotta Mini Cakes
Makes 2 dozen.
2 1/4 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/8 tsp. salt
1/2 c. unsalted butter, softened
1 c. granulated sugar
1 c. ricotta cheese
1 egg
1 tsp vanilla
2 c. powdered sugar
3 Tb. milk

Preheat oven to 350 and lightly grease two baking sheets (or line with parchment).

Whisk flour, baking soda, baking powder, and salt.

Beat butter and granulated sugar together until blended. Add ricotta, egg, and vanilla and beat until blended. On low speed, add flour mixture. Drop by tablespoonfuls onto cookie sheets and bake until golden brown around the edges, about 14 minutes. Let cool on sheets for a few minutes, then place them on a cooling rack to cool completely.

For glaze, whisk powdered sugar and milk until smooth. Dip centers of cookies in–glaze will slowly spread down the sides. Let glaze harden
Add 1 part hungry husband....................
I hope you makes these and love them as much as I did!! TIP!!!! Next time I am going to make the glaze a lemon glaze I imagine that will be divine!!!!!

die Familie

So tonight was a rare treat..............meeting relatives for the FIRST time and not just any relatives.....but my German ones!!! LONG story short my grandpa went to war, was stationed in Germany and brought home a beautiful German wife, Oma! And tonight I got to meet my Great Aunt Ilsa who is my Oma's sister, they are visiting the states for a week!! You won't believe that this is the first time they have seen one another in 22 years........
I can not get over how much they look alike and something I really loved was how my Oma came alive!! She was beaming tonight and if you have never heard a room full of people speaking German while laughing at the top of their lungs than you are missing out. And yes, Ilsa and Herbert do not speak English so I did alot of smiling and nodding! Also yes, my mom is fluent....a little rusty but great!! I worry Oma will be very devastated come Tuesday when they go back to Germany....
sometimes you don't realize how much you miss something until you have it back.
My sister and cousin Brittany are missing from this picture but here are the ladies of the family................

Tonight was so neat......Ilsa even brought me the most beautiful necklace from Germany she told me her daughter Honey helped pick it out. I was so thankful and excited. Tonight made me smile, be happy and be sad all at the same time. Sad that I don't get the chance to know these people who seem so wonderful and sad for my Oma......seeing her and her sister together was magical to me. Almost brought a little tear to my eye!  I hope Ilsa and Herbert have a safe flight home Monday and it was so NICE to meet you both.

My baby sister isn't a baby anymore

So this past Tuesday was my sister Marissa's graduation at the Cox Center and since she was SR Class President she got to carry the torch, lead the Sr Class in, give the speech and be the first one to graduate!!
Here she is speaking, she did such a good job......speaking in front of thousands!!!!!!
Each year a tradition older than I am... every Senior gets a roll of tissue and at the end of the commencement instead of throwing hats we do this......
I am so proud..................
I can't believe that this week I am writing her OU rush reference letter for Tri Delt!!! Insane! Love you Marissa!
