Touching doesn't describe this .....

Tuesday night we (Me & my JH Gals)  volunteered at The Miracle League in Edmond and had a BALL, literally!!! They play at Mitch Park and I am not sure who had more fun.....us or the teams??? This is a special league for disabled children and we fell in love! They even have a wheelchair assessable field!
This was a rewarding experience and I can't wait to volunteer again!! Luckily I am once again the Community Outreach Chair and I get to decide these things! To learn more about this wonderful organization click here!!
This is my new pal Destiny and I can not explain her properly.....JOYFUL is not a great enough word to describe her. Destiny is in 9th grade and LOVES softball. The rule is everyone in this game gets a hit...and Destiny has some disabilities that hinder her playing ability but this gal swung and on her 15th swing got a hit......and she was nothing but smiles. At the end of the night she introduced me to her mom and this really touched me. This is a night where I drove home with a smile so big and I fell into bed with a heavy heart.

 Today I am old......................

 I am working on a Blog post called "30 things before 30".....but give me time!!! Today I have to take a class ALL afternoon for my new job which luckily will be followed by dinner with Matt!!!! And yes, I am on the Interstate 29....life is going too fast!

Donut Cake!!!

Don't kid yourself......you know I could not wait to make this Donut Cake!!! HAHA!! I used the "from scratch" recipe on the Williams-Sonoma box and it turned out great! The cake was a dense heavy cake and the chocolate icing tasted JUST like the icing on a donut! Of course it does not look exactly like the picture on the box, but they never do!!! SO say hello to my DONUT CAKE! LOL!

Birthday Brunch!!

Yesterday I had the most relaxing, delish and fun filled brunch with my great friend Allison! You can visit her blog here (she hasn't updated in awhile, no biggie). I was so lucky to have worked with Allison's hubby Michael at Mickey Mantle's Steakhouse for years and we formed a good friendship and then he was so nice enough to introduce me to his wife (and then Fiance') and we have been friends ever since!!!
Yesterday Al took me to Cheevars for brunch and we devoured Chicken & Waffles.....to die for!!!! To look at Cheevars Brunch Menu click here!
One reason why Al & I get along so well is that we LOVE ALL things Culinary and she got me the Donut cake pan & sprinkles from Williams & Sonoma!!! I am so excited!!! THANK YOU! I mean how silly, cute and ME! And in case you were wondering I think I may make myself a Birthday cake it in today! I wonder if I could get mine to look like the box? We shall see!
It was such a great Sunday to kick off my Birthday week!!!

I raced thru this book in 3 days because I could not put this down, I had to know what happened next. This book is touching, heartbreaking and real. The book switches between 1942 and 2002....the story is woven together beautifully! I also loved how this book digs into the past and you relive this awful time and while I was reading I was heartbroken for the real people who had to endure this awful "round up"....we rarely hear about this happened in Paris. I really recommend this book I think it is one of those that everyone should read once.

So, we had Saturday ALL planned out....we were going to go to the OKC Art's Festival for some grub followed by meeting some friends at the Redhawks Game!! But then the weather got well.....weird! The temp dropped and then came the crazy winds and brief showers. And I don't know about you but I don't love eating outside and sitting at a baseball game while being wind blown and cold. SO the backup plan was to go eat some Mexican and then go to see The Back-up Plan! And get this..........when we arrived at the Moore Warren theatre they had blown power and was closed for the night! No joke!!!! SO what was plan #3?? Go home and lay on the couch! ha!

We can't wait...

SO my Birthday is not until this Wednesday but Matt couldn't wait to give me my presents! We always do this, we open Christmas early, his Birthday....it's like as soon as we buy something we both want the other to have it right away!! So.........
Friday night Matt did a small scavenger hunt....placing these 3 Coach boxes in places I would use the gift to get ready. Like the watch box was on my dresser with my jewelry, the shoe box was in my closet and the key chain box was in my purse with my keys! He did a WONDERFUL job...I LOVE everything! Thank you so much Matt! Love you!

Switching gears COMPLETELY.............

I don't even have to tell you how excited I am ....This will debut on Oprah today!!!!

Ok so yesterday  I was aimlessly watching Oprah's Earth Day special and what I didn't know was how  this episode would effect me............that it would reach down into my soul and urge me to write this and urge me to do something. So please bear with me as I try to write a post that will hopefully urge you to do the same.

Taiji is a small fishing village located on the southern part of the Japanese archipelago at the tip of the peninsula that extends into the Pacific Ocean.
This is where the practice of driving dolphins into shallow water and slaughtering them began. Sanctioned by the Japanese government, thousands of dolphins and others small whales are killed every year.

Ok, now that you know what this about I will tell you how this effected me..............
I hope you know that Dolphins are the second smartest mammal on the ENTIRE planet behind chimps! They have their own language, the mothers stay with and teach their young for 3 years, they are skilled hunters, they solve problems and they feel human emotions as well as showing empathy for others. So when did I become a activist? I am not but after watching the clip of the "Dolphin Slaughter" on Oprah you would have to be dead to not let it affect you. When Oprah played the clip she even gave a warning of the graphic nature..........how it affected me was a shock.........I literally burst into tears, without even thinking I was in hysterics it was as if a loved one had been killed. I was surprised at myself but something deep inside me was shook. No living thing should be trapped and then brutally killed one by one as there family watched. What has stuck with me was the sound of the dolphins screaming, screaming for themselves and for their families. The sound was very human and it is something that will take some time for me to move past.........it was horrifying, I can not put it into words. The picture below is not doctored, this is what "The Cove" looks like after the slaughter and yes that is blood.
What can you do?? You can start by signing this petition right HERE. You do have to sign up for an account while doing this but the entire process took me 3minutes, so I beg of you to do the same. It was said on Oprah yesterday that they are close to a million signatures and when they have them the hope is that the Japan government as well as our own may take note. This just really really hit me hard no living creature should be treated this way and I urge you to watch the documentary and to pass the petition on to friends and family. Watch this PSA..........


Please pass this on, I know this was not the most "well written" or the "most informative" thing you could of read but this came from my heart. I have a passion for animals and this is a call to arms.

I have had the worst migraine all day and I just got home from work.....working while having a migraine is the PITS!!!! Also I am having to suffer, I am out of my pills and there is nothing I can do but suffer!

Fish please....

Looking for a light, healthy and yummy Spring dish?? Well I have a great one for you....I have made this twice in the past week. This is "based" on a Giada recipe........
In your packet:
Cod (I got frozen on sale and defrosted the day of)
Rub this on the fish: Tyme, Salt, Pepper and Lemon Zest
Top with lemon slices
And then I used these ingrediants: Cooked Bacon & Sliced Fennel! Then the next time Shallots & Sun dried tomatoes. Just play around with this anything will work!!!!!
Then pour in 5 tablespoons of white wine & close packet!
Roast at 400' for 30 minutes and ............
YUMM!!!!!!!!!!!!!!!!
This is great the wine steams your fish and mixes with the lemons to make a delish sauce! Enjoy!!!!

Ghosts Amoung Us

Ok, so most of you who read my blog know I am a bunch of things and amoung them that I am a believer and I enjoy ghost stuff and I always have. How I came across the book below is kinda odd................
I was walking around Barnes and Noble where I found this book and only one copy of this was misplaced on a table of Chick Lit as if it was calling out my name!! And let me tell you this book is amazing!! Currently I have 4 people reading it who LOVE it and 2 more in line to borrow it! James Van Praagh is a famous medium who has even solved FBI cases and is the consultant on the Ghost Whisperer and this is like his 4th book. Here is the "jest"

So this book really changed the way I see a ton of things, I can not wait to re-read this!! He does speak with references to the Bible and this is in no way "secular or occult" and I recommend this HIGHLY for anyone who wonders about Heaven, our loved ones who are gone or what happens when we die. I believe this 100% and you should read this..............
