So I am starting to feel better today, not up to par but better! I have SOOO much to catch you all up on and some SUPER great pictures from this weekend before I got sick!!

And get this............so I did not eat or so much as take a sip for 24 HOURS and I actually gained a pound! LOL!! I was for sure thinking I would of lost like 5! I am the only person I know who gains weight while throwing up!

So you know Chips for Charity was a raging success but then yesterday I had a stomach bug and wanted to die!! I threw up every 30minutes for over 8 hours and did not even keep so much as a tsp of sprite down for over 24 hours.

Today I am better, I had some Malt O Meal but I am still under the weather....hope tomorrow I am back to normal!

So far this week I have devoured cupcakes from Ruth's Sweet Justice and then yesterday I made "THE" Best Chocolate Cake ever for my JH meeting and I took the rest home and just ate an entire ROW!!!!!!!!!! Help!

Love it when my shows come back....

My Baby is 2 today!

2 years ago today I pulled into a parking lot and found this bundle of cuteness abandoned! I look at this picture and can not imagine he was ever this small.
Is my baby not the cutest thing you have ever seen?? They grow up so fast! hehe

I spoke briefly about this book last week and in case you missed it click HERE to see the author's video so you are caught up. This book was WONDERFUL!!!!!!!!!!!! She ended this book with so many possibilities for a second and I pray she does. This was filled with history, art, the Bible, suspense and it was RIGHT up my alley! Hey friends!! So this morning I was on News Channel 4 Rise & Shine....things went great...I even got a laugh from "The Laughing Guy" if you know what I mean! They said I should be in broadcasting which was a nice thing for Lance West the anchor to say to make me feel great! SO then as I was leaving the studio the director comes to me and said ...you have a call on the news line. Uh, ok! haha....and it was Reid Mullins from KTOK radio station asking me to do a phone interview....uh SURE THING!! It is so nice to be able to spread the word about JH and the Great things we do in the community! I won't lie it was very cool to be at home watching News 4 then get in the car and 45minutes later be on the same show!

Reminder.....watch Fox News 25 tomorrow morning at 8:30!!!!

Hey Guys....

So I know most of you will already be at work or starting your days but I wanted to tell everyone that TOMORROW Morning I will be on KFOR Rise & Shine at 8:15!! Which oddly enough is channel 16 for me and may be for you too!! I am going to be spreading the word about Chips for Charity and the wonderful organization The CARE center that our proceeds will be going towards!!!
Yes, I hope I get to meet David Payne!
THEN............Thursday Morning I will be on FOX Morning News at 8:30 (I Believe) and that is channel 12 or 712 whichever you choose!
I am excited JH has asked me to do this again and I hope everything will go as smooth!!!

So I am saddened to tell you that I had 3 people show up to my Scentsy Open House yesterday and 2 of those people were kids! Ha, Thank You to Becky for being the only person to come! The weather, the cold and the snow really sucked. I had my table with new scents all lined up........
And yes, you know what I had to breakfast this morning and tomorrow also!
This sums up my party......it went down the drain!
So since I was down in the dumps and the weather was yucky I needed some comfort and what better than a recipe called Comfort Meatballs!! Of course this is a Pioneer Woman recipe.....
1-½ - pound Ground Beef
¾ - cups Oatmeal (I used quick oats)
1 - cup Milk
3 - Tablespoons Very Finely Minced Onion
1-½ - teaspoon Salt
Plenty Of Ground Black Pepper, to taste

To Cook Meatballs:
1 - cup All-Purpose Flour
(coating For Frozen Meatballs)
Canola Oil (a couple tablespoons)

1 - cup Ketchup
2 - Tablespoons Sugar or Brown sugar
3 - Tablespoons Vinegar
2 - Tablespoons Worcestershire
4 - Tablespoons - 6 Tablespoons Onion (optional)
1 - dash Tabasco (I used Louisiana hot sauce)
Preheat oven to 350 degrees.Combine all meatball ingredients. Roll into medium-small balls and place on a cookie sheet. Place sheet in freezer for five minutes.After 5 - 10 minutes, remove meatballs from freezer and immediately dredge in unseasoned flour. Brown meatballs in canola oil until just brown. Place into a baking dish.Combine all sauce ingredients. Pour over meatballs and bake at 350 degrees for 45 minutes. Serve with mashed potatoes.
This is messy so have a towel ready..........
I served mine with Roasted Garlic Mash Potatoes.............
Cut the head off the garlic so the bulbs are exposed, then drizzle with EVOO and wrap in foil. Roast for 45min at 400 degrees, let cool then remove bulbs and mash with the potatoes. YUMM your house will smell divine!

These were so good they tasted like mini meatloaf bites! Definitely warm and comforting!

I then headed straight to the couch to watch New Moon!!
There is something about the snow and cold weather that makes me feel like cooking...tonight I am going to be real ambitious and make Beef Wellington! Yup, you heard me the real deal....cross your fingers for me that it turns out!

The show must go on...

So I am SUPER devastated that the weather is suppose to be a flipping BLIZZARD on the first day of Spring! BUT....my show must go on! My Scentsy Parties are on no matter what plus I have no way of cancelling them. I was really hoping for a BIG turn out so this is a major bummer! Reminder I am having a party at 10am and 1pm and if you are reading this you can come to either!

The BEST feeling in the world

So I woke up with a Migraine today which blows and is so funny......because last night during my nightly prayer (while washing my face it is a ritual) I thanked God for letting me feel so well all week....I spoke too soon. I still had to go to Pets Mart this morning because the kids are almost out of food and while I was there I picked up some cheap toys for my kids. A Newspaper, a foot and a hot dog...well when I bring the sack in I say "What is it?" followed by "Do you want one?" and they go crazy! I then dole out the toys and watch them become so glee-ful it fills my heart with JOY!
This is typical Oscar, I have decided he is OCD with an emphasis on Hoarding...
But then there is my Ralphie.....he took the Hot Dog and galloped around the yard for more than 10minutes......
He pranced like a pony, raced with the new toy and then pounced it. These pictures do not do justice to how happy my babies are today.
I mean I know you all must think this is silly but I am so blissful and filled with joy when I watch them with their new toys ....I almost for a bit forget briefly how bad I feel.
I hope your day is filled with as much joy as my dogs morning was!

A rare treat.....

So last night Matt actually was able to come home for dinner and I was excited!! So I decided to bust out something new and Irish! First up was homemade Irish Soda Bread (Ina Garten) and I am not gonna lie it was amazing, I can't believe it turned out so well. Take a look...............
4 cups all-purpose flour, plus extra for currants
4 tablespoons sugar
1 teaspoon baking soda
1 1/2 teaspoons kosher salt
4 tablespoons (1/2 stick) cold unsalted butter, cut into 1/2-inch dice
1 3/4 cups cold buttermilk, shaken
1 extra-large egg, lightly beaten
1 teaspoon grated orange zest (I doubled this)
1 cup dried currants (I omitted this)

Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.

Combine the flour, sugar, baking soda, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix on low speed until the butter is mixed into the flour.

With a fork, lightly beat the buttermilk, egg, and orange zest together in a measuring cup. With the mixer on low speed, slowly add the buttermilk mixture to the flour mixture. Combine the currants with 1 tablespoon of flour and mix into the dough. It will be very wet.

Dump the dough onto a well-floured board and knead it a few times into a round loaf. Place the loaf on the prepared sheet pan and lightly cut an X into the top of the bread with a serrated knife. Bake for 45 to 55 minutes, or until a cake tester comes out clean. When you tap the loaf, it will have a hollow sound.

Cool on a baking rack. Serve warm or at room temperature

I served mine with 2 different toppings........butter & Apricot preserves or butter & honey! Delish!!! I had the left over for breakfast today!
Next up.....................Creamed Eggs on Toast! My mom made this when I was growing up and I love it!
Start by boiling 8 eggs, peel them and separate yolk from white!
Then chop up the egg whites and mash the yolk in a separate bowl!
In a skillet melt 2 tablespoons of butter and then mix in 1/3 cup of flour to make a rue. Then begin stirring in slowly 2 cups of whole milk over med-low heat until the sauce thickens.
Next add 2/3 of the yolk back in the sauce, stir until almost dissolved.
Lastly stir in the egg whites, salt and pepper to taste!
Toast some bread and pile on the eggs!!! I omitted the green food coloring because it was so pretty without it!
Top with chopped green onion and YUM!!! Matt loved this!
So there you have it....yes, the sausage was pork AKA our Ham!! ha!!! That was our Irish feast and it was so good! Hope you had a nice night!

Luck of the Irish

I wanted to wish everyone Happy Green Day!! And I looked up the meaning of the day on the History Channel.com so some random facts for you..............
St. Patrick's Day is celebrated on March 17, his religious feast day and the anniversary of his death in the fifth century. The Irish have observed this day as a religious holiday for over a thousand years. On St. Patrick's Day, which falls during the Christian season of Lent, Irish families would traditionally attend church in the morning and celebrate in the afternoon. Lenten prohibitions against the consumption of meat were waived and people would dance, drink and feast—on the traditional meal of Irish bacon and cabbage.

Remember Me

So on Monday night I got to have a bit of a Girls Night Out and it felt extra special since it was a Monday but a Friday. I went to dinner with my girlfriends Becky & Jeana and then to see Remember Me with Rob Pattinson. Jeana is getting married this summer you can see her wedding blog HERE and so we chatted about wedding details, work and family.

This movie is very "heavy" and filled with emotion so if you think you are going to see a romance with Edward from Twilight think again. This movie made me think and even thought it was sad I enjoyed it, I felt this movie was different from the norm. Of course Rob is very charming and his co-star was a great match for him, lucky girl. I would recommend this movie and if you do see it shoot me a message I want to hear your thoughts on the ending.
