You won't believe what I am doing...

Ok, so by now if you read my blog you know that I really like Ghost Hunters the show and I have discussed before how I have always had a bit of a "thing" for the paranormal. Yes, Yes it is odd considering I despise horror movies but they are completely different! I love how this show is backed up by historical research and science, it is like eash episode comes with a history lesson of a haunted place !!! Ghost Hunters are part of TAPS a paranormal group they founded on the east coast and come to find out they have a group here in Oklahoma! No no I am not joining, I am not that brave just interested....well, Halloween is coming up and everyone tends to go to Haunted Houses this time of year and I have found something even better...
I just got two tickets to the event below!!!! I know can you believe it? You prolly are thinking I am weird and who knows I may be but what is better than a Haunted House the weekend before Halloween than a REAL Haunted Theatre???? You can click on the picture below to go to the site for more information... the ticket includes a presentation on the paranormal and then in a group of 20 you get to investigate this historic theatre from 9-11:30pm (the time we picked)!! Yes, Matt is going with me and he thinks I am weird but deep inside I think he is excited!
This video below is made by the Oklahoma Tourism site and it is only 3min long but it gives the incredible history of the Poncan Theatre as well as accounts of ghostly sitings!!!!!!!! Who knows our chances of seeing or hearing anything are slim I realize, but what a unique way to celebrate Halloween?? You should come!!!

Manners please...

Hello world, I am an interrupter and I don't mean to be! It is true, I am lacking manners in this area and is the first step to correction knowing the problem? Well if so then I am on my way to recovery!
Example: Last night I was at a dinner meeting for JH, we were planning our Charity Event for this spring and afterwards about 5 of us stayed to chit chat......we talked about all sorts of randomness and I interrupted my friends alot. I don't do it to be mean or rude I do it because I get so excited about whatever we are chatting about I just can't wait to share! Really, that is exactly why it happens I just simply can not seem to wait my turn. Pathetic huh? I hope no one takes it is a rude way and heck we were all talking over one another in excitement but this stuck with me on my drive home. So sorry if my interrupting has ever offended anyone I am vowing to make an effort to improve in this area.......I mean if my comment has to wait 2min until it is my turn I will survive, I think? HA!

Well yesterday on Oprah she had on the most famous people from around the world and I was completely enamored with this Bollywood real life husband and wife....Ash & Abhi as they are called by their billions of fans!! They are a million times more famous than Brad & Anjelina are to us to the other half of the world.....
She has been dubbed by her fans, the media and the world as the "Most Beautiful Woman in the World" and just look at her.......... she is! In 1994 before her film career she was Miss Universe.
I searched everywhere for this interview from Oprah because what made them so wonderful was how funny, down to earth and just nice people they were. He was so funny and she never boasted about her 15million per movie paycheck and they even talked about how they still live with his family.
I just thought man she is amazing, a real class act...........
Here is a movie poster of their most recent movie that they star in together! They talked about how in Bollywood when a couple meets, falls in love instead of a love scene like in the states they cut to a song & huge dance number. She has actually never kissed another actor on screen in all her 40 films!
Anyways this was just something different that peaked my interest and I wanted to share! Now if only we all her looked like them?

My little thriving business

Since I showed you around my "day" job last week I thought I would show you a little of what happens when a Scentsy order comes in!!! And yes, I love it and I am soo glad that I joined this GREAT company!!! It is so easy and fun! Yesterday I got two big boxes delivered to the office and I get so excited, even though they are not for me it is still like Christmas!
Something exciting is that yesterday kicked off Day One of my first Scentsy Fundraiser!!! I have about 30 girls selling for the next two weeks from a Dance Studio in Moore, below is the piles of order forms, welcome letters, info sheets and condensed catalogs that I was putting together in "packets" to hand out last night at the studio!
Here are my finished Wickless Fundraiser packets!! I hope they knock it out of the ballpark with sales and then the real job beings when I have to separate out all these orders! yikes!
I took the boxes home and spread them all over the living room and being separatin and putting orders in cute bags for delivery! I think that if you get something that looks like a present with a good presentation people will get even more excited about what they bought! I mean I do!

This usually takes me about an hour and I also label all the wax so people will be reminded how to contact me with re-orders! Some exciting Scentsy insider news is........... Oct 1 we will be debuting our NEW Holiday Line of Warmers and Plug Ins! I am so excited!

I want to give a quick shout out to my dear friend Jennifer & her hubby Chris they had their baby this morning in Norman... a little boy 7 pounds 10 oz, Costner Jeremy Hammons!!! Congrats to the new Mom & Dad!!!

Sunday in the Kitchen

Yesterday morning I wanted to start our lazy day off right with some breakfast and I had the time so I used a recipe I knew and changed it up! Here it is ....

Nicole's Lazy Sunday Breakfast Bake
6 eggs
1/2 cup milk
loads of cheese
1 can crescent rolls
Garlic Salt & thyme
Whisk together the eggs and the milk
Cook the bacon, you can cook as much as you would like but this is all we had in the house!
Then in a greased 9 x 13 pan cover the bottom with the crescent rolls... make sure to fill in the holes and go up onto the side just a smidge! Then crumble the cooked bacon on top!!
Next sprinkle Pepper, Garlic Salt & Thyme to your liking into the eggs and whisk!
Pour the egg mixture over the bacon and rolls and top with tons of cheese! Put the bake into a 350 degree oven for 25min or until the center is firm!
Then enjoy! It was so yummy and I ate mine with a bit of Grape Jelly on top... Matt thinks this is weird but it adds a hint of sweet to the savory!
Now we are moving on to Sunday Dinner and what a better way to enjoy a lazy day watching the tube then to put something in the crock pot and let it simmer all day!!! This meal was delish and it made the house smell so good..... maybe Scentsy should make a Beef Stew scent? HA!
Beef Stew with Beer Biscuits

4 celery stalks, chopped
4 carrots, peeled and sliced into 1-inch thick rounds
4 red potatoes, chopped into large dice
1 medium onion, chopped
1 teaspoon chopped fresh thyme leaves
1 (1-pound) chuck roast, cut into 1-inch cubes
2 tablespoons all-purpose flour
1 (14.5-ounce) can less sodium beef broth
1 (14.5-ounce) can diced tomatoes
1 tablespoon cider vinegar
2 teaspoons minced garlic
1 teaspoon hot sauce
Salt and fresh ground black pepper
Beer Biscuits, recipe follows
In a 6-quart slow cooker combine the celery, carrots, potatoes, onions, thyme and beef. In a large bowl, stir together all the remaining ingredients and pour over the beef and vegetables in the slow cooker. Cover and cook on high for 5 hours. Transfer to a serving bowl and serve with Beer Biscuits.

Beer Biscuits:
2 1/4 cups all-purpose baking mix
2 tablespoons sugar
1 cup beer
Preheat oven to 375 degrees F.

In a large mixing bowl, mix all ingredients with a whisk until just combined. Using 2spoons divide dough into 4 even mounds and put on a baking sheet. Bake for 8 to 10 minutes until golden brown. (mine never got golden brown but they were soo good)
This meal is great! And I wanted to take it as lunch today but all of our Tupperware is missing?!?

Weekend Wrap Up

This weekend was filled with complete opposites......Saturday was a jamb packed cleaning world wind while Sunday I became one with the couch and caught up on a weeks worth of TV! And the new shows Eastwick & Flashforward are great!!! But I am getting ahead of myself Friday night Matt & I went to the movies not because there was something we were dying to see but because we wanted to go! ha, We saw Surrogates with Bruce Willis and it was entertaining, the concept was very intriguing and I would say you at least should rent this when it comes out! Saturday Matt invited a friend from Basketball league over and his wife and I made the Pumpkin Cupcakes I talked about last week again............
And when I asked Matt what he would like to me to make he said Bobby Flay's LA Burger and I was happy to!!! Luckily our guests love avocado and pumpkin so they enjoyed the meal as much as we did!!! Here is a bit of my "set up"
We cleaned all day because we were having people over and to be honest it was nice to do a major deep clean!!! Below is a picture of a clean living room with our new rug!!!! (and some dogs)
I showed my mantle last week and this time I got the fireplace fixed up with new candles, some fall leaves and some scattered pumpkins in the leaves which I don't think you can see but they are there!!
I was excited to get some Fall mums and here is what Matt did in the back, I thought it was real clever putting them in our drink bin...
Here is a red mum we put out in the front on our bistro table! And I got leaf garlands to put around the base of the mums and I was thrilled with how good they looked!
We also got some small wood pumpkins to put throughout the flower beds and we re-did our black is amazing how BIG a difference fresh mulch can make a yard look!!!!!!
And this is the yellow mum that welcomes you as you come to our front door.........
Ok, so I guess I like pumpkins huh?
These I got at Hobby Lobby all half off to decorate the patio table for our guests!!!
Well I hope I did not bore everyone with my fall decor but it makes me happy and I had to share our hard work! Stay tuned because I cooked up a storm yesterday and have recipes to share!!!!

So as you know I have posted my "Semi-Homemade Spaghetti" on here before and it is one of my favorite fall back recipes!!! I usually use ground turkey but this time I did 1/2 lb Chuck and 1/2 lb Italian Sausage and I always simmer by meat in red wine. Well Matt picked up the wine on the way home and he got this... Doghouse Merlot for only 8$ and it was wonderful!!! If you all ever see this at the Wine shop grab it and make yourself some spaghetti!!!!

As I type I am devouring a Kit Kat, it screamed for me.......... see post below!
Now I will feel guilty all afternoon for washing down my Pizza with a KitKat, I normally eat sandwiches for lunch if you are wondering!

My life at the office

So since we all spend around 40 hours at our office I thought I would give you the grand tour of mine!!!!! Since we are a construction type business it is a casual and relaxed office and I get to wear things like this everyday......
This is my desk in the main reception area.... yes, that is a Mr Potato Head waving at you!
This is the view when you walk in the front door and see my smiling face when I say "May I help you?"
This is the office plant that has been alive for over 10 years but recently I am struggling to keep this bad boy alive.....
Here is the hallway that the offices, conference room, break room and everything else branches off of! Way in the back you will find Matt's office and then the Hollow Metal company that works out of our building as well!!!!
This is our big wood door shop where we store stock doors, house big orders as they come in from the manufacturer before we deliver and the shop guys machine the doors in the back!
And this is the Big Guy aka Owner aka Dad! ha
And here is what is going on in the break room today......... Donuts? Check. My fav candy of all time KitKats? Check. This is killing me every time I walk by the KitKats call my name and no I will not tell you how many of each I have eaten this week or what I plan on eating today!!
This is the view from my desk this is a busy street and everyday I see at least 5 homeless people walk thru our parking lot and at least once a week a stray dog wanders by.... and yes, it does kill me but I can not take home every stray I see (animals that is).
